Basic Rice Pilaf

Basic Rice Pilaf

Basic Rice Pilaf

Ingredients

  • whole grain rice- 1 cup
  • almond slivers- 2 oz.
  • olive oil- 3 tablespoons
  • lemon juice- 1 teaspoon
  • garlic salt- 2 teaspoons

Instructions

  1. Bring 1 cup rice and 2 cups water to boil in saucepan (or use rice steamer)
  2. Once boiling, cover and reduce heat to low to simmer until liquid is absorbed, approximately 10 minutes
  3. Add all remaining ingredients to cooked rice: almonds, olive oil, lemon juice and salt
  4. Toss

Mediterranean Potatoes

Ingredients

  • potatoes, russet or gold- 2 lbs (4), peeled and sliced into ¼-inch slices
  • feta cheese, crumbled- 4oz.
  • kalamata olives, pitted- 1 small 6oz. jar
  • Staples:
  • salt- 1 tspn
  • olive oil- ¼ cup
  • minced garlic- 1 tablespoon
  • dried oregano- 1 tspn
  • ground cumin- 1 tspn

Instructions

  1. Heat oven to 425 degrees F
  2. Arrange potato slices onto greased baking dish
  3. Season potato slices with salt
  4. In small mixing bowl or measuring cup combine olive oil, garlic, oregano and cumin; mix well
  5. Pour olive oil mixture over potatoes
  6. Top potatoes with feta cheese and kalamata olives
  7. Bake until brown, approximately 40-45 minutes

Ratatouille Pan-Simmered Steak with Brown Rice

Ingredients

  • beef top round steak - 3-4 lbs
  • zucchini - (1) sliced
  • eggplant - (1) small, peeled and diced into medium-sized chunks
  • stored sliced red and green bell peppers
  • beef broth - (1) 15oz. can
  • crushed tomatoes - (1) 28oz. can
  • brown rice - 1½ cups
  • chicken broth - (1) 15oz. can
  • STAPLES
  • olive oil – 3 tablespoons
  • minced garlic - 1 tablespoon
  • water- 1 cup

Instructions

    Steak
  1. Heat olive oil and garlic in large deep skillet or Dutch oven over medium-high heat
  2. Sear steak in olive oil, flipping once, until brown on both sides, approximately 2 minutes each side
  3. Place zucchini, eggplant and bell peppers over the steak
  4. Cover vegetables and steak with tomatoes and beef broth
  5. Reduce heat to low; cover and simmer until steak is cooked through and tender, approximately 1 hour (the longer it cooks, the more tender the steak will be)
  6. Rice
  7. Bring rice, chicken broth and water to boil in saucepan over medium-high heat
  8. Once boiling, cover and reduce heat to low to simmer until liquid is absorbed, approximately 15 minutes

Traditional Tomato Meatloaf

Ingredients

  • ground beef- 1½ lbs
  • bell pepper- 1, diced
  • onion, white- 1 small, peeled and minced
  • tomato sauce- 1 14oz. can
  • STAPLES:
  • egg- 1
  • breadcrumbs- 1 cup (omit for gluten-free version)
  • salt & pepper- 1 teaspoon each or seasoned salt

Instructions

  1. Heat oven to 375⁰.
  2. In large mixing bowl combine beef, diced peppers and onions, egg, breadcrumbs and salt & pepper.
  3. Mix loosely with a spoon first then use hands to mix well.
  4. Place beef mixture into baking dish and use hands to form loaf (or heart if it’s Valentine’s Day) leaving at least a 2 inch gap between meatloaf and sides of dish.
  5. Pour tomato sauce over meatloaf.
  6. Bake until cooked through, approximately 45 minutes.
