Ingredients
- potatoes, russet or gold- 2 lbs (4), peeled and sliced into ¼-inch slices
- feta cheese, crumbled- 4oz.
- kalamata olives, pitted- 1 small 6oz. jar
- salt- 1 tspn
- olive oil- ¼ cup
- minced garlic- 1 tablespoon
- dried oregano- 1 tspn
- ground cumin- 1 tspn
Instructions
- Heat oven to 425 degrees F
- Arrange potato slices onto greased baking dish
- Season potato slices with salt
- In small mixing bowl or measuring cup combine olive oil, garlic, oregano and cumin; mix well
- Pour olive oil mixture over potatoes
- Top potatoes with feta cheese and kalamata olives
- Bake until brown, approximately 40-45 minutes
