Two Salad Recipes for Fall Pears

Fall Pears make for the most beautiful and delicious salads for Thanksgiving or for any family dinner.  Here are two simple recipes to make the most out of this Fall fruit.

Pear Spinach Salad

Ingredients

  • Fresh baby spinach lettuce- 16 oz.
  • Pears, 1 each (or any combination of) of Bosc (dark yellow), Red Anjou and Green Anjou- sliced
  • shredded Parmesan cheese- 2 oz.
  • Balsamic Vinaigrette, or Steakhouse Vinaigrette

Instructions

  1. Place spinach lettuce in your prettiest Fall salad bowl
  2. Top with sliced pears
  3. Drizzle with dressing and toss
  4. Top with cheese

Fall Pear Walnut Gorgonzola Salad

Ingredients

  • Spring or Arugula Salad Lettuce- 16 oz.
  • Pears, 1 each of Bosc (dark yellow), Red Anjou and Green Anjou- sliced
  • Gorgonzola Cheese Crumbles- 4 oz.
  • Walnuts, chopped- 2 oz.
  • Balsamic Vinaigrette or Steakhouse Vinaigrette

Instructions

  1. Place lettuce in your prettiest Fall salad bowl
  2. Top with sliced pears
  3. Drizzle with dressing and toss
  4. Top with Gorgonzola cheese and walnuts

Chicken and Brown Rice Dinner In A Pumpkin

Chicken and Brown Rice Dinner In A Pumpkin

Ingredients

  • small to medium pumpkin- 1
  • celery- 2-3 stalks, trimmed and diced
  • fresh sliced mushrooms- 1 container
  • vegetable oil- a few tablespoons
  • rotisserie chicken- (chicken pulled from one store-bought cooked rotisserie chicken)
  • dried rosemary and dried thyme- 1 teaspoon each (or a tablespoon of poultry seasoning)
  • cream of chicken soup- 1 can
  • cream of celery soup- 1 can
  • cooked brown rice- 2 cups

Instructions

  1. Wash off outside of the pumpkin.
  2. Cut off top of the pumpkin and save, and thoroughly clean out seeds and pulp.
  3. Preheat oven to 350 degrees.
  4. In a large skillet, saute celery and mushrooms in oil until tender.
  5. Add chicken and season with rosemary, thyme and a little salt & pepper.
  6. Stir in soup.
  7. Simmer for just a few minutes, stirring occasionally.
  8. Add cooked rice.
  9. Spoon mixture into clean pumpkin shell.
  10. Replace pumpkin’s top.
  11. Place filled pumpkin onto a baking sheet.
  12. Bake one hour or until meat of the pumpkin is tender.
  13. Put pumpkin onto a serving plate, remove pumpkin “lid” and serve casserole!
  14. Make sure to scoop out and eat the cooked pumpkin – Enjoy!

If you’re a subscriber to The Organized Cook, you might be having Fall Rigatoni for dinner tonight.

Sweet, tangy jellied cranberry combined with zesty chili sauce makes this family dinner easy to “fall” for.

Ingredients

  • ground beef- 1 lb
  • rigatoni pasta- 1 lb
  • jellied cranberry sauce- 1 15oz. can
  • Heinz chili sauce- 1 12oz. jar
  • shredded mozzarella cheese- 1 cup
  • shredded Parmesan cheese- 1 cup

Instructions

  1. Heat oven to 375 degrees F.
  2. Boil pasta in boiling salted water until tender.
  3. Brown beef in skillet over medium-high heat
  4. Add cranberries and chili sauce to beef and mix well until cranberries are dissolved
  5. Drain pasta and add to beef mixture; toss and transfer to a casserole baking dish
  6. Top with both both cheese (Saving a small handful of Parmesan if you're making Pear Walnut Salad)
  7. Bake until slightly brown, approximately 25 minutes
