Cucumber Beet Radish Salad

Ingredients

  • 1 cucumber, peeled
  • 1 bundle of radishes, trimmed
  • 3 beets, trimmed and peeled
  • red leaf lettuce- 1 bundle, washed and chopped
  • For the salad dressing:
  • Steakhouse Vinaigrette Recipe

Instructions

  1. place chopped lettuce into salad bowl
  2. slice cucumber into 1/2-inch slices
  3. stack cucumber slices into piles of four at a time, then dice into matchsticks
  4. slice the radishes and beets into matchstick shapes similar to cucumbers
  5. top lettuce with cucumber, radishes and beets
  6. drizzle with Steakhouse Vinaigrette
  7. toss

Fall Pears make for the most beautiful and delicious salads for Thanksgiving or for any family dinner.  Here are two simple recipes to make the most out of this Fall fruit.

Pear Spinach Salad

Ingredients

  • Fresh baby spinach lettuce- 16 oz.
  • Pears, 1 each (or any combination of) of Bosc (dark yellow), Red Anjou and Green Anjou- sliced
  • shredded Parmesan cheese- 2 oz.
  • Balsamic Vinaigrette, or Steakhouse Vinaigrette

Instructions

  1. Place spinach lettuce in your prettiest Fall salad bowl
  2. Top with sliced pears
  3. Drizzle with dressing and toss
  4. Top with cheese

Ingredients

  • Spring or Arugula Salad Lettuce- 16 oz.
  • Pears, 1 each of Bosc (dark yellow), Red Anjou and Green Anjou- sliced
  • Gorgonzola Cheese Crumbles- 4 oz.
  • Walnuts, chopped- 2 oz.
  • Balsamic Vinaigrette or Steakhouse Vinaigrette

Instructions

  1. Place lettuce in your prettiest Fall salad bowl
  2. Top with sliced pears
  3. Drizzle with dressing and toss
  4. Top with Gorgonzola cheese and walnuts

Orzo Broccoli Mushroom Feta Salad

Orzo Broccoli Mushroom Feta Salad

Ingredients

  • Orzo Pasta- 1 cup (8 oz.)
  • baby spinach lettuce- 16 oz.
  • white mushrooms, sliced- 8 oz.
  • Feta cheese crumbles- 4 oz.
  • Lemon- 1/2 (or 1 teaspoon lemon juice)
  • STAPLES:
  • salt- 1 teaspoon
  • olive oil- 3 tablespoons

Instructions

  1. Boil pasta in salted water until tender, then drain
  2. Heat oil in large heated saute pan
  3. Add spinach and mushrooms to saute until tender
  4. Transfer pasta to large mixing or salad bowl
  5. Once spinach is reduced (but not overcooked), add to pasta in bowl
  6. Add cheese
  7. Squeeze lemon over the top
  8. Toss

  • 1 cup each- fresh basil, parsley and/or chives, chopped
  • 1 cup butter, melted
  • 1 cup olive oil
  • 4 cloves garlic, peeled and minced or 4 teaspoons minced garlic

Instructions

  1. combine all ingredients together
  2. pour into ice cube tray
  3. freeze
