Slow Cooker Beef Au Poivre

Slow Cooker Recipes

Steak Au Poivre is translated as Steak with Pepper.  This is my Slow Cooker version for this simple, but gourmet beef dish.

Slow Cooker Beef Au Poivre Recipe

whole black peppercorns

Ingredients:

  1. beef round roast- 4-6 lbs
  2. whole black peppercorns- 3 tablespoons
  3. bay leaf- 1
  4. cognac or cooking sherry (optional)- 1 cup
  5. beef broth- 1 15 oz. can or 1
  6. corn starch- 2 tablespoons
  7. heavy cream- 1/2 cup

 

Directions:

  1. Coarsely crush peppercorns using a mortar and pestle; or if you don’t have one, use a meat tenderizer mallet in a cake pan or the bottom of a cast-iron skillet to crush
  2. Press the peppercorns into the sides of the roast and place one bay leaf on top
  3. In a large skillet, brown roast on both sides, approximately 3 minutes each side
  4. Transfer roast in large slow cooker and season with salt
  5. Add cognac or sherry and beef broth; then add any additional water to cover the roast completely
  6. Cover and cook on high for at least 6 hours

For sauce:

  1. Spoon about 2 cups of juice with peppercorns from slow cooker into a medium skillet
  2. Dissolve corn starch in juice
  3. Bring to a boil over medium-high heat
  4. Add cream and mix well; season with more pepper
  5. Serve sauce spooned over roast beef

Fire Rice

This simple and mild recipe for Fire Rice gets its name from the color- not the flavor.  With vibrant red, orange and yellow bell peppers, I couldn’t think of a more appropriate name for this delicious side dish.

Fire Rice Recipe

Ingredients:

  1. cooked long-grain rice- 2-3 cups (this recipe is perfect with leftover steamed rice)
  2. red, orange and yellow bell peppers- diced fine
  3. cilantro- 1 bundle ripped from stems

Staples:

  1. olive oil- 3-4 tablespoons
  2. minced garlic- 1 tablespoon
  3. saffron- 1 pinch
  4. salt

Directions:

  1. Heat olive oil over medium-high heat
  2. add cooked rice, garlic and saffron; and saute for about two minutes
  3. season with salt to taste
  4. add diced bell pepper and saute for another two minutes
  5. add cilantro and toss

Add crushed red peppers for a spicy version!

Homemade Sweet Potato Fries

Homemade Sweet Potato Fries Recipe

With the many health benefits of sweet potatoes combined with my weakness for fries, sweet potato fries are quickly becoming my favorite side dish.

Ingredients:

  1. Sweet Potatoes- 1-2 large
  2. olive oil- 1/4 cup
  3. Montreal Steak Seasoning- 2 tablespoons

Directions:

  1. Heat oven to 400 degrees
  2. Wash sweet potatoes and slice in half length-wise and then width-wise; then slice each section into long, thin pieces- or cut into rounds for grilling
  3. Transfer slices to mixing bowl
  4. Drizzle potatoes with olive oil and top with Montreal Steak Seasoning, then toss

  5. Transfer to a baking sheet
  6. Bake, flipping once, until crisp, approximately 8-10 minutes each side

 

Secret Fries Sauce Recipe

Ingredients:

  1. ketchup- 1/4 cup
  2. dijon- 2 tablespoons
  3. Worcestershire sauce- 1 tablespoon

Directions:
