Fire Rice

This simple and mild recipe for Fire Rice gets its name from the color- not the flavor.  With vibrant red, orange and yellow bell peppers, I couldn’t think of a more appropriate name for this delicious side dish.

Red, Orange and Yellow Bell Peppers

Fire Rice Recipe

Ingredients:

  1. cooked long-grain rice- 2-3 cups (this recipe is perfect with leftover steamed rice)
  2. red, orange and yellow bell peppers- diced fine
  3. cilantro- 1 bundle ripped from stems

Staples:

  1. olive oil- 3-4 tablespoons
  2. minced garlic- 1 tablespoon
  3. saffron- 1 pinch
  4. salt

Directions:

  1. Heat olive oil over medium-high heat
  2. add cooked rice, garlic and saffron; and saute for about two minutes
  3. season with salt to taste
  4. add diced bell pepper and saute for another two minutes
  5. add cilantro and toss

Add crushed red peppers for a spicy version!
