Peep! Skip The Frosting Cupcakes.

Set your timer three minutes before baking is complete and place one Peep on each cupcake, then bake until melted- approximately three minutes.

This Easter, save time baking cupcakes by skipping the frosting and using Peeps to melt on your cupcakes.

I used a basic white cake mix and added food coloring:

add a few drops of food coloring; I like Duff's Neon Food Coloring

Corn Flake Fish Sticks

Homemade Fish Sticks Recipe


Corn Flake Fish Sticks

Ingredients

  • white fish, like cod- 1½-2 lbs (i found a bulk 2 lb bag of frozen cod from artic shores for $7.99 at albertsons)
  • celery stalks- 2, chopped fine
  • Corn Flakes- 2 cups
  • STAPLES:
  • egg- 1
  • Old Bay seasoning- 1 tbspn
  • dried dill, dried parsley- 1 tspn each
  • breadcrumbs- 1 cup
  • mayonnaise- about ¼ cup
  • lemon juice
  • canola oil

Instructions

  1. Preheat oven to Broil
  2. Place fish on baking sheet and pat dry
  3. Bake until cooked thoroughly, approximately 7 minutes
  4. Transfer fish to large mixing bowl and flake with a fork
  5. Add celery, egg, Old Bay, dill, parsley, breadcrumbs, mayonnaise and lemon juice; mix well
  6. Place Corn Flakes in shallow bowl
  7. Heat oil in deep skillet over medium-high heat
  8. Hand-roll fish mixture into sticks or patties (they don’t have to be perfect) then gently roll in Corn Flakes
  9. Fry in oil until crispy brown on both sides, approximately 7 minutes total
  10. Transfer to paper-towel lined plate to cool

This was my first attempt at making homemade fish sticks.  By flaking cooked white fish and combining it with seasoning, I topped it off with a Corn Flakes coating and the result was delicious- the kids and I couldn’t stop eating them.  They taste like a healthier, modern version of a retro diner food, which is why I included them in my “Peggy Sue’s Diner Weekly Meal Plan“.

I have an aunt named Peggy Sue.  Really.

One time she made enchiladas for me and it was- ideally- the most American 1960′s way to make enchiladas I could imagine.  She actually mixes together red and green enchilada sauce- they were unique and delicious.  I used her simple enchiladas recipe, titled “Peggy Sue Enchiladas” in this week’s meal plan.

Both Peggy Sue and her enchiladas inspired me to create a new Pinterest board just for them.  I love Pinterest and we love you Peggy Sue!
