French Toast, Meet Banana Split

Fun Weekend Breakfast Recipe

Banana Split, meet French Toast.  It doesn’t get more decadent and fun than this.  And the great thing about this recipe is how simple it is.

If you’re having weekend company for the upcoming holiday and want to make something super yummy and easy, this is the recipe for you.

Banana Split French Toast by The Organized Cook

French Toast, Meet Banana Split

Ingredients

  • Texas Toast- 1 loaf
  • Peanut Butter
  • Bananas, peeled and sliced- 2 or 3
  • Strawberries, sliced- 1 pint
  • Chocolate Chips- 2 cups
  • Eggs or Egg Beaters, beaten in shallow dish- 1/2 dozen
  • Canola Oil

Instructions

  1. Heat canola oil in non-stick skillet over medium-high heat
  2. Spread peanut butter on two slices of bread, top side only
  3. On one bread slice, arrange banana slices, strawberries and chocolate chips on top of peanut butter
  4. Place second slice of bread on top, and while holding sandwich together dip both sides into egg batter
  5. Cook sandwich in oil- flipping once- until crispy brown on both sides
  6. Slice sandwich in half, serve and enjoy! Oh, and don’t forget to take a photo!

Banana Split French Toast by The Organized Cook

 

Ingredients:

  1. Texas Toast
  2. Peanut Butter

Directions:


1.   Butter one side of bread with peanut butter

2.   Arrange banana slices, strawberries and chocolate chips on top of peanut butter

Mother’s Day Breakfast Recipes

What do I want on Mother’s Day?  I honestly never give that question much thought because I’m typically too worried about what I need to be doing for everyone else.

But one thing I do know is that my daughters love to cook breakfast for me on Mother’s Day and there’s nothing I enjoy more.  No gift or expensive dinner night out can amount to the joy I get from watching how excited this 8 year-old and her younger sister are about cooking breakfast on their own.  They pick flowers from our garden and get their dad to pour me coffee.

Festive Potato Cakes

Festive Potato Cakes

Ingredients

  • mashed potatoes- 4 cups (perfect recipe for Leftover Mashed Potatoes)
  • flour- 1 cup
  • eggs- 2
  • milk- 1 cup
  • red bell pepper- diced
  • green bell pepper- diced
  • vegetable oil- 1/ 4 cup
  • green onions- 3, trimmed and diced
  • sour cream

Instructions

  1. combine mashed potatoes, flour, eggs and milk and beat until lumps are gone
  2. mix in red and green bell pepper
  3. batter should be slightly thicker than pancake batter; if too runny add 3 tablespoons of flour, and if too thick add 3 tablespoons of milk
  4. heat vegetable oil in non-stick skillet
  5. spoon potato mixture onto skillet to form a cake
  6. cook until brown on bottom before flipping, approximately 5 minutes- note: it takes a lot longer for potato cakes to cook than pancakes, so be patient
  7. once brown on the bottom, flip over to cook until brown on both sides
  8. serve with sour cream and green onions to garnish
