French Toast, Meet Banana Split

Fun Weekend Breakfast Recipe

Banana Split, meet French Toast.  It doesn’t get more decadent and fun than this.  And the great thing about this recipe is how simple it is.

If you’re having weekend company for the upcoming holiday and want to make something super yummy and easy, this is the recipe for you.

Banana Split French Toast by The Organized Cook

French Toast, Meet Banana Split

Ingredients

  • Texas Toast- 1 loaf
  • Peanut Butter
  • Bananas, peeled and sliced- 2 or 3
  • Strawberries, sliced- 1 pint
  • Chocolate Chips- 2 cups
  • Eggs or Egg Beaters, beaten in shallow dish- 1/2 dozen
  • Canola Oil

Instructions

  1. Heat canola oil in non-stick skillet over medium-high heat
  2. Spread peanut butter on two slices of bread, top side only
  3. On one bread slice, arrange banana slices, strawberries and chocolate chips on top of peanut butter
  4. Place second slice of bread on top, and while holding sandwich together dip both sides into egg batter
  5. Cook sandwich in oil- flipping once- until crispy brown on both sides
  6. Slice sandwich in half, serve and enjoy! Oh, and don’t forget to take a photo!

Ingredients:

  1. Texas Toast

Directions:


1.   Butter one side of bread with peanut butter

2.   Arrange banana slices, strawberries and chocolate chips on top of peanut butter

You don’t have to dye your eggs green with food coloring to bring some St. Patty’s Day fun to your breakfast table with this simple recipe.

Ingredients

  • large green bell pepper- sliced
  • eggs, small
  • butter or oil
  • Parmesan cheese

Instructions

  1. slice bell pepper into 1/2-inch whole slices lengthwise
  2. place in heated skillet with melted butter or oil
  3. crack egg in the center of bell pepper slice and cook until set, approximately 1 minute
  4. flip and cook on other side until achieved desired consistency
  5. garnish with shredded Parmesan cheese
  6. serve with fruit like green apples and grapes, and toast

Berry-Good Coffee Cake VIDEO

This is the perfect recipe for kids to help make for mother’s day or father’s day.  I always make this cake for breakfast the day after Thanksgiving, and it’s the recipe people ask me for the most.

 

Here’s the recipe:

Berry-Good Coffee Cake

Ingredients

  • 4 tbspns butter (1/2 stick)
  • 1 cup sugar mixed with 1/4 cup cinnamon
  • refrigerated buttermilk biscuits- 2 canisters
  • frozen berries, like blueberries and/or strawberries- 16 oz.
  • 1/2 cup lemon juice, or juice squeezed from 2 lemons

Instructions

  1. heat oven to 350 degrees
  2. grease a bundt-cake pan with butter
  3. pour frozen berries into bundt-cake pan
  4. slice biscuits in half
  5. dip each biscuit piece into lemon juice then roll in cinnamon-sugar before placing in pan on top of the berries
  6. once pan is full of biscuit pieces, press down to firm
  7. bake until cooked thoroughly, approximately 45-50 minutes

Open-Face Steak & Egg Sandwich with Pan Gravy

Ingredients

  • Steak, sliced thin- 1 per person
  • French bread, 1-inch slices
  • Eggs- 1 per person
  • salt & pepper
  • canola oil- 2 tablespoons
  • butter- 2 tablespoons
  • milk- 1 cup
  • flour- 2 tablespoons

Instructions

  1. Season steak with salt & pepper
  2. Place bread slices on plate
  3. Heat a oil in medium skillet over medium-high heat
  4. Cook steak, flipping once, until brown on both sides then transfer to bread slices
  5. Fry eggs until medium then transfer atop bread and steak
  6. Melt butter to pan
  7. Add flour and saute until flour browns (will look like peanut butter)
  8. Very slowly pour milk into flour while whisking
  9. Stir until desired consistency- add more milk if too thick or more flour if too thin- (you want the gravy in the pan to be slightly thinner than how you want it on the plate)
  10. Serve gravy spooned over the top of sandwich
