Eggplant Parmesan

Eggplant Parmesan

Ingredients

  • eggplant- 1 large
  • spaghetti sauce- 1 jar
  • shredded Parmesan cheese- 1 cup (8 oz.)
  • STAPLES
  • egg- 2
  • seasoned breadcrumbs
  • olive oil- 1 cup

Instructions

  1. Peel eggplant with a vegetable peeler and slice into ½-inch slices
  2. In two shallow dishes, beat eggs in one and pour bread crumbs in the other
  3. Heat olive oil in large deep heated or non-stick skillet over medium-high heat
  4. Dip each piece of eggplant, one at a time, first in the egg mixture to coat both sides and then in bread crumbs, again coating both sides
  5. Place in hot oil to fry until golden brown, approximately 3 minutes each side; transfer each cooked piece to a long shallow baking dish
  6. Heat oven to 375º
  7. Cover eggplant with spaghetti sauce then top with Parmesan cheese
  8. Bake for 20 minutes

Italy-Meets-London Broil with Spaghetti Aglio E Olio & Balsamic Vegetables

Italy-Meets-London Broil with Spaghetti Aglio E Olio & Balsamic Vegetables

Ingredients

  • beef top round shoulder steak (London Broil)- 2-3 lbs
  • pesto sauce- 1 8oz. jar
  • green beans, fresh- 1 lb, washed and trimmed
  • grape tomatoes- 1 pint, sliced lengthwise in halves
  • zucchini- 1, sliced into ½-inch slices
  • squash- 1, sliced into ½-inch slices
  • balsamic salad dressing- ½ cup
  • shredded Parmesan cheese- ½ cup (4 oz.)
  • spaghetti pasta- 1 lb
  • STAPLES
    Vegetables:
  • minced garlic- 1 tbspn
  • olive oil- 2 tablespoons
  • Spaghetti:
  • olive oil- ¼ cup
  • minced garlic- 1 tbspn
  • crushed red pepper flakes (optional)

Instructions

    Steak
  1. Heat oven to Broil
  2. Use hands to rub pesto sauce on steak covering top, bottom and sides completely, then place on broiling pan
  3. Cook on middle rack, turning once, until brown, approximately 7-9 minutes each side depending on desired doneness
  4. Let steak stand about 10 minutes before slicing into thin slices to serve
  5. Vegetables
  6. Line baking sheet with aluminum foil so foil is longer than baking sheet
  7. Place green beans in the center of foil
  8. Top green beans with tomatoes, zucchini, squash and garlic
  9. Drizzle vegetables with olive oil
  10. Fold foil over vegetables and fold sides up pressing together at top to form a cocoon
  11. Cook alongside steak or bake at 425º until vegetables are tender, approximately 15 minutes, then transfer to serving bowl
  12. Drizzle balsamic dressing over vegetables and toss, then garnish with Parmesan cheese
  13. Spaghetti
  14. Boil spaghetti in salted water until tender
  15. Before draining pasta, use glass measuring cup or coffee cup to scoop out a cup of the cooking water
  16. Drain pasta
  17. Transfer pasta to serving bowl
  18. Pour cooking water over the top followed with olive oil, garlic and red pepper flakes (optional); then toss

This recipe is made with leftover steak, preferably London Broil, sliced thin.

Philly Cheese Steak Subs

Ingredients

  • leftover cooked sliced steak (preferably London Broil
  • thin deli-sliced mozzarella cheese- 1/4 lb
  • onion, peeled and sliced into thin strips
  • green bell pepper- 1, sliced into strips
  • mushrooms, sliced- 8 oz.
  • hoagie rolls
  • STAPLES
  • vegetable oil- 3 tablespoons
  • Worcestershire sauce

Instructions

  1. Heat oil in heated or non-stick skillet over medium-high heat
  2. Add bell pepper slices, onion slices and mushrooms while seasoning with Worcestershire sauce to sauté until vegetables are tender, approximately 4 minutes
  3. Add steak slices and sauté for another minute
  4. Lay slices of mozzarella cheese over steak mixture to melt, approximately a minute, then use spatula to transfer to hoagie rolls

Ingredients

  • Cavatappi Pasta- 1 lb
  • Food coloring- Wilton or Duff's Electric Pink, Orange and Yellow (found at Michael's or Walmart)
  • steam-ready broccoli florets- 8 oz.
  • steam-ready asparagus tips- 8 oz.
  • Alfredo sauce- 1 jar

Instructions

  1. Fill pasta pan with water and add 4-5 drops of food coloring (one color at a time) and a teaspoon of salt; mix well
  2. Bring to boil
  3. Add one-third of pasta and boil in salted water until tender
  4. Repeat steps 1-3 for additional two colors
  5. Steam broccoli and asparagus
  6. Transfer pasta to serving bowl and top with steamed broccoli and asparagus
  7. Combine blue food coloring and Alfredo sauce to mix well, then drizzle over the top of pasta to create a river
