My smart breakfast idea for Sunrise Breakfast Bowls is made with First Street Eggs from Smart & Final, and is simple to make by following the photo tutorial below.

Sunrise Breakfast Bowls Recipe

Ingredients:

  1. First Street Eggs- 1 dozen (on sale for $.99 this week at Smart & Final)
  2. Whole grain bread- 12 slices with crust taken off
  3. Pre-cooked or slightly undercooked bacon- 12-24 slices
  4. Butter

Photo Tutorial:

1.  Preheat oven to 375 degrees.

2.  Grease a muffin tin with butter and place one slice of bread into each hole pressing down in the middle.

3.  Crack one egg directly onto each slice of bread.

4.  Place one or two slices of bacon into each egg.

5.  Bake until egg is just cooked, or until desired consistency- yolk runny, about 10 minutes; slightly runny, about 13 minutes and cooked thoroughly, about 15 minutes

  • 1 cup each- fresh basil, parsley and/or chives, chopped
  • 1 cup butter, melted
  • 1 cup olive oil
  • 4 cloves garlic, peeled and minced or 4 teaspoons minced garlic

Instructions

  1. combine all ingredients together
  2. pour into ice cube tray
  3. freeze

Hearty Breakfast Frittata

Ingredients

  • breakfast sausage- 1 lb
  • sliced mushrooms- 1 pint
  • baby spinach- 1 8oz. pre-cut ready to eat bag
  • eggs- 1 dozen, scrambled, or 1 large carton of Egg Beaters
  • shredded mozzarella cheese- 2 cups
  • roma tomatoes- 2, sliced
  • dried parsley for garnish

Instructions

  1. In paella pan or any large skillet that can be transferred to the oven, cook sausage until slightly brown
  2. Add mushrooms and spinach to saute with sausage until mushrooms and spinach are tender and sausage is completely brown
  3. Add cheese
  4. Pour beaten eggs over the top
  5. Lay sliced tomatoes on top of egg
  6. Sprinkle with dried parsley
  7. Heat oven to Broil
  8. Let egg cook until it begins to set; the sides will begin to firm, approximately 6 minutes
  9. Transfer to oven and Broil until top begins to brown and egg is cooked thoroughly, approximately 14 minutes
  10. Slice like pizza to serve
