Pineapple Brown Sugar Ham

Pineapple Brown Sugar Baked Ham

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Pineapple Brown Sugar Ham is the perfect entree recipe for Easter brunch or dinner.

Ingredients

  • spiral-cut ham
  • sliced pineapple in juice- 1 can
  • brown sugar- 2 cups

Instructions

  1. preheat oven to 325 degrees F
  2. mix together juice from pineapple and brown sugar to form a paste; add more brown sugar if too runny
  3. place ham cut-side down on heavy-duty aluminum foil
  4. secure pineapples to the outside of ham with toothpicks
  5. brush brown sugar paste over the ham and pineapples; using all of the paste
  6. cover and wrap the ham with foil, or use oven roasting bag
  7. bake 10 minutes per pound of ham or until meat thermometer reads 140 degrees F
  8. remove from oven and let sit for at least 10 minutes before slicing
  9. remove toothpicks before slicing

Guacamole Fresco

Guacamole Fresco by Serene

Ingredients

  • 3-4 medium avocados
  • 1 Tomato (diced)
  • 1/2 Purple Onion (diced) or 2 T of chopped Green Onions
  • 1 garlic clove (minced)
  • 2 T chopped cilantro (or more if desired)
  • 1/2 Jalapeño Pepper (finely chopped)
  • 1/2 Lime
  • 1/2 Lemon
  • Sea Salt to taste

Instructions

  1. Mash the avocados and then add diced tomatoes, onions, garlic, cilantro, and jalapeño.
  2. Mix well.
  3. Then add the juice of 1/2 a lime and 1/2 a lemon and sprinkle sea salt for taste.
  4. Mix again to incorporate the juices and salt and add more if desired.

Debby’s Guaca-Guacamole

Debby’s Guaca-Guacamole

Ingredients

  • 2 avocadoes
  • ½ diced tomato
  • 1/2 diced red onion
  • 1 jalapeno, seeded and diced
  • 1 tablespoon diced cilantro
  • 1 fresh lime
  • Salt and fresh-cracked pepper to taste
  • ¼ cup fresh pomegranate seeds or dried cranberries

Instructions

  1. Dice avocado into small chunks and place in a serving bowl.
  2. Add tomatoes, onion, jalapeno and cilantro. Squeeze fresh lime juice over mixture.
  3. Sprinkle with salt and pepper to taste.
  4. Stir together.
  5. Add pomegranate seeds or dried cranberries.
  6. Mix gently and serve immediately.
  7. If pomegranates are not available, dried cranberries work well instead.
  8. Enjoy!
