Lemon-Braised Chicken

Lemon-Braised Chicken

Ingredients

  • whole chicken- 5lbs
  • lemons- 2
  • cinnamon sticks- 2
  • fresh rosemary sprigs- 4
  • STAPLES
  • poultry seasoning (like Lawry’s perfect blend), or a combination of salt, pepper, paprika and thyme
  • butter- 2 tbspns (to sauté chicken)
  • milk- 2 cups

Instructions

  1. Remove and discard neck from chicken then rinse and pat dry with a paper towel.
  2. Season chicken generously with poultry seasoning.
  3. Melt butter over medium-high heat in Dutch oven or large skillet that can be transferred to oven.
  4. Saute chicken in butter breast side up first for 20 minutes until brown, then turn over with breast side down
  5. Add milk, zest from both lemons, juice from one lemon, cinnamon sticks and rosemary.
  6. Heat oven to 325⁰.
  7. Cover chicken with oven-safe lid or aluminum foil and transfer to oven to cook for 45 minutes.
  8. Remove lid and cook for an additional 30 minutes or until internal thermometer reaches 160⁰.
  9. Serve chicken carved with sauce from pan spooned over the top.

St. Patrick’s Day Dinner Traditions

St. Patrick’s Day…. aaah, the “boiled meal”.  Every year I make the traditional Corned Beef, Cabbage & Potatoes.  And not knowing any other way to cook corned beef, we’ve enjoyed our festive St. Patty’s Day boiled dinner while looking forward to Reuben Sandwiches made with leftover roasted Corned Beef.

This year I wanted something different than boiled corned beef and cabbage, and with a little experimentation, here’s what my family and friends will be eating this year at my house for St. Patrick’s Day.  This was my first time roasting Swiss chard and I’m now a fan- it compliments the salty corned beef beautifully!

Bye-bye boiled dinner!

Roasted Corned Beef, Sweet Potatoes & Swiss Chard

Roasted Corned Beef, Sweet Potatoes & Swiss Chard

Roasted Corned Beef, Sweet Potatoes & Swiss Chard Recipe:

Ingredients:

  1. corned beef brisket- 2-3 lbs

    Swiss chard and sweet potatoes

    chopped Swiss chard and sweet potatoes

  2. sweet potatoes- 1-2, peeled and diced into cubes
  3. Swiss chard- 1 bundle, rinsed and patted dry
  4. olive oil- 1/2 cup
  5. spicy brown mustard- 1/4-1/2 cup

Directions:

  1. boil corned beef brisket in sufficient amount of water to cover beef, using seasoning packet if provided 2 1/2- 3 hours
  2. (about 15 minutes from corned beef being done) Heat oven to 400 degrees
  3. toss diced sweet potatoes in about three tablespoons of olive oil

  4. roast sweet potatoes until slightly tender, approximately 8 minutes; remove from oven
  5. trim stems of Swiss chard, then chop remaining stem and leaves
  6. remove cooked corned beef from water and transfer to cutting board
  7. scrape and discard fat from corned beef
  8. chop corned beef then add to chopped Swiss chard in mixing bowl
  9. add cooked sweet potatoes to mixing bowl
  10. pour olive oil and mustard over the top; toss and transfer to baking sheet
  11. roast until Swiss chard is crunchy and sweet potatoes are cooked thoroughly, approximately 12 minutes

I used a mismatch selection of various shades of green tableware.  Some of the green dishes, napkins and serving dishes came from my pantry while others I selected from various stores like Pier1, Target and HomeGoods- how marvelous it was to not have to decide on one set!  Instead, I was able to select pieces from many collections.

These regal chairs sit in our Living Room and were hand-selected by my husband (who is both Irish and a Leo).  I thought they made a perfect addition to our al fresco dinner table.

 

It’s difficult to get the boiled version of corned beef & cabbage to photograph well- it’s not the most photogenic meal out there, that’s for sure.  This year’s dinner of Roasted Corned Beef, Sweet Potatoes and Swiss Chard was a supermodel compared the traditional recipe.

Chicken and Brown Rice Dinner In A Pumpkin Recipe

Chicken and Brown Rice Dinner In A Pumpkin

Chicken and Brown Rice Dinner In A Pumpkin

Ingredients

  • small to medium pumpkin- 1
  • celery- 2-3 stalks, trimmed and diced
  • fresh sliced mushrooms- 1 container
  • vegetable oil- a few tablespoons
  • rotisserie chicken- (chicken pulled from one store-bought cooked rotisserie chicken)
  • dried rosemary and dried thyme- 1 teaspoon each (or a tablespoon of poultry seasoning)
  • cream of chicken soup- 1 can
  • cream of celery soup- 1 can
  • cooked brown rice- 2 cups

Instructions

  1. Wash off outside of the pumpkin.
  2. Cut off top of the pumpkin and save, and thoroughly clean out seeds and pulp.
  3. Preheat oven to 350 degrees.
  4. In a large skillet, saute celery and mushrooms in oil until tender.
  5. Add chicken and season with rosemary, thyme and a little salt & pepper.
  6. Stir in soup.
  7. Simmer for just a few minutes, stirring occasionally.
  8. Add cooked rice.
  9. Spoon mixture into clean pumpkin shell.
  10. Replace pumpkin’s top.
  11. Place filled pumpkin onto a baking sheet.
  12. Bake one hour or until meat of the pumpkin is tender.
  13. Put pumpkin onto a serving plate, remove pumpkin “lid” and serve casserole!
  14. Make sure to scoop out and eat the cooked pumpkin – Enjoy!

Mushroom Beef Dinner In A Pumpkin

Ingredients

  • small to medium pumpkin- 1
  • onion- 1/2, chopped
  • fresh sliced mushrooms- 1 container
  • vegetable oil- a few tablespoons
  • ground beef- 1 1/2 to 2 lbs.
  • ginger- 1 teaspoon
  • soy sauce- 3 tablespoons
  • brown sugar- 2 tablespoons
  • cream of mushroom soup- 1 can
  • sliced water chestnuts- 1 can, drained
  • cooked long grain rice- 1 1/2 – 2 cups

Instructions

  1. Wash off outside of the pumpkin.
  2. Cut off top of the pumpkin and save, and thoroughly clean out seeds and pulp.
  3. Preheat oven to 350 degrees.
  4. In a large skillet, saute onion and mushrooms in oil until tender.
  5. Add meat and brown with a little salt & pepper- drain drippings from skillet.
  6. Stir in ginger, soy sauce, brown sugar and soup.
  7. Simmer 10 minutes, stirring occasionally.
  8. Add cooked rice and water chestnuts.
  9. Spoon mixture into clean pumpkin shell.
  10. Replace pumpkin’s top.
  11. Place filled pumpkin onto a baking sheet.
  12. Bake one hour or until meat of the pumpkin is tender.
  13. Put pumpkin onto a serving plate, remove pumpkin “lid” and serve casserole!
  14. Make sure to scoop out and eat the cooked pumpkin – DELICIOUS! Enjoy!
