Westminster Crackers

Ingredients

  • round gourmet crackers
  • English cucumber- 1, sliced
  • Maytag blue cheese (or a blue cheese spread like Laughing Cow)
  • radishes- sliced thin

Instructions

  1. Find the prettiest blue plate you have
  2. Assemble crackers with cucumber, cheese and then radish on top
  3. Serve and enjoy!

Sticky Toffee Pudding

Sticky Toffee Pudding

Ingredients

  • butter- 1/2 cup (1 stick), softened
  • sugar- 1 cup
  • flour- 2 cups
  • baking powder- 1 tspn
  • egg- 1, whisked
  • pitted dates, chopped- 6-8oz.
  • baking soda- 1 tspn
  • boiling water- 1 cup
  • Glaze
  • butter- 1/2 cup (1 stick), softened
  • brown sugar- 1/2 cup
  • vanilla- 1 tspns

Instructions

  1. Cream together butter and sugar
  2. Mix together the flour and baking powder
  3. Add whisked egg to flour mixture and beat for about a minute
  4. In another bowl, pour boiling water over the dates and mix in the baking soda
  5. Add date mixture to flour mixture and mix well
  6. Place in round greased baking dish and bake for 40 minutes
  7. Glaze
  8. When the pudding is cooked, heat the butter, brown sugar and vanilla over medium-high heat and simmer gently for 3 minutes.
  9. Pour over the pudding and place under a grill until it starts to bubble.
  10. Then serve.

Cottage Pie

Ingredients

  • prepared mashed potatoes- 16 oz. (2 cups)
  • ground beef- 1 lb
  • onion, white- 1 peeled and minced
  • 1 7oz. can diced carrots
  • flour- 2 tbspns
  • nutmeg- 1 tspn
  • dried parsley and oregano- 1 tspn each
  • 1 15oz. can beef broth
  • tomato paste- 2 tbspns

Instructions

  1. Preheat oven to 375 degrees
  2. Make meat filling by browning beef and minced onion together in a skillet
  3. Add carrots, flour, nutmeg and herbs and saute for just a minute
  4. Add broth and tomato paste to mix well
  5. Transfer meat mixture into casserole baking dish
  6. Spoon potatoes and spread loosely over the top
  7. Bake until bubbly inside, 20-25 minutes

Escalloped Carrots

Ingredients

  • 5-6 large carrots, sliced into 1/2 inch slices
  • 4 cups seasoned breadcrumbs
  • onion- 1, minced
  • shredded cheddar cheese- 2 cups
  • milk- 2 cups
  • butter or margarine- 4 tbspns

Instructions

  1. Heat oven to 375 degrees F.
  2. Melt butter or margarine in casserole baking dish.
  3. Place carrots, breadcrumbs and onion in alternate layers on top.
  4. Season with salt and pepper to taste.
  5. Cover with cheese.
  6. Pour milk over the top.
  7. Bake until bubbly and brown, and carrots are tender approximately 1 hour.

  4. Season with salt and pepper to taste.
  5. Cover with cheese.
  6. Pour milk over the top.
  7. Bake until bubbly and brown, and carrots are tender approximately 1 hour.
