Thai Chicken Curry

Ingredients

  • boneless skinless chicken breasts- 2 lbs (If you're cooking more chicken than needed to store for dinner later on in the week like Weekly Meal Plan, use 3-4 lbs)
  • red bell pepper - 1, diced
  • coconut milk - 1 14oz. can
  • green curry paste - 2 tbspns
  • thai fish sauce - 2 tbspns
  • bamboo shoots, sliced - 1 8oz. can, drained
  • chicken broth - 1 14oz. can
  • long grain rice, white or brown - 1 cup
  • Staples
  • canola or vegetable oil- 3 tbspns

Instructions

  1. Dice chicken breasts into 1-inch chunks
  2. Heat a few tablespoons oil over medium-high heat in deep skillet; add chicken and sauté until cooked, approximately 5 minutes
  3. If you're cooking more chicken than needed to store for dinner later on in the week like Weekly Meal Plan, once chicken is cooked, scoop out about half of the cooked chicken and store in the refrigerator.
  4. Add to chicken in skillet: red bell pepper, coconut milk, curry paste, fish sauce, drained bamboo shoots and chicken broth, then bring to boil
  5. Once boiling, reduce heat to low and simmer for approximately 5 minutes
  6. Rice:
  7. In large saucepan, bring 1 cup rice and 2 cups water to boil
  8. Cover and reduce heat to low until water is absorbed, approximately 20 minutes

Sauteed Steak with Spinach, Tomatoes & Avocado

Sauteed Steak with Spinach, Tomatoes & Avocado

Ingredients

  • 4 6-oz. thin- cut steaks like beef tenderloin steaks (1/2- to 3/4-inch thick)
  • baby spinach- 16 oz.
  • tomatoes, roma or vine-ripened- 2, sliced into 1-inch slices and then in half
  • avocado- 1, diced
  • for Rice:
  • brown rice- 1 cup
  • chicken broth- 1 14.5oz. can
  • STAPLES
  • salt & pepper
  • olive oil- 3 tablespoons
  • butter- 2 tbspns
  • water- ½ cup

Instructions

  1. Season steak with salt and pepper
  2. Heat olive oil in skillet over medium-high heat and sauté steaks in oil until brown; do not overcook
  3. Remove cooked steaks to a serving plate
  4. Add butter to skillet and melt over medium-high heat
  5. Add tomatoes and sauté until they begin to brown, approximately two minutes
  6. Add spinach and sauté until reduced, approximately 3 minutes
  7. Add diced or sliced avocado and spoon mixture over steak
  8. Serve with rice
  9. Rice
  10. Bring chicken stock, water and rice to a boil
  11. Once boiling, cover and reduce heat to low to simmer until all liquid is absorbed

Berry-Good Pork Tenderloin with Herb Roasted Potatoes

Ingredients

  • pork tenderoin or roast- 2 lbs (Farmer John makes an all-natural 2-pack of pork tenderloins for about $11.00)
  • blackberry or boysenberry jam or preserves (not jelly)- 1 jar
  • red potatoes- 3-4 medium-large
  • STAPLES
  • Tenderloin:
  • crushed black pepper- 4 tablespoons
  • salt- 1 tablespoon
  • cooking spray
  • Potatoes:
  • olive oil- ¼ cup
  • salt, pepper, thyme, paprika- 1 teaspoon each

Instructions

    Tenderloin:
  1. Line baking sheet with foil and grease with non-stick cooking spray
  2. Preheat oven to 350 degrees F
  3. Fill plate with crushed black pepper, and salt together (or use Montreal seasoning)
  4. Massage jam over tenderloins covering all sides, then roll in seasoning before placing on the greased baking sheet
  5. Cook in oven for 35-40 minutes until internal thermometer registers 160⁰
  6. Let tenderloin sit for 5-10 minutes before slicing to serve
  7. Potatoes:
  8. Clean and dice potatoes into 1-inch cubes
  9. Place in foil-lined baking dish
  10. Drizzle olive oil over the top of potatoes and toss
  11. Season with salt, pepper, thyme and paprika
  12. Bake alongside tenderloin until cooked thoroughly
  13. For a crunchy top, after tenderloin is removed from oven, heat oven to Broil and cook potatoes an additional 5 minutes under broiler

Traditional Tomato Meatloaf

Ingredients

  • ground beef- 1½ lbs
  • bell pepper- 1, diced
  • onion, white- 1 small, peeled and minced
  • tomato sauce- 1 14oz. can
  • STAPLES:
  • egg- 1
  • breadcrumbs- 1 cup (omit for gluten-free version)
  • salt & pepper- 1 teaspoon each or seasoned salt

Instructions

  1. Heat oven to 375⁰.
  2. In large mixing bowl combine beef, diced peppers and onions, egg, breadcrumbs and salt & pepper.
  3. Mix loosely with a spoon first then use hands to mix well.
  4. Place beef mixture into baking dish and use hands to form loaf (or heart if it’s Valentine’s Day) leaving at least a 2 inch gap between meatloaf and sides of dish.
  5. Pour tomato sauce over meatloaf.
  6. Bake until cooked through, approximately 45 minutes.
