Greek Pita with Oikos Organic Greek Yogurt Cucumber Sauce

Greek Pita Pocket with Oikos Greek Yogurt Cucumber Sauce

Greek Pita Pocket with Oikos Greek Yogurt Cucumber Sauce

Ingredients

  • ground beef- 1½ lbs
  • onion, small- ½, peeled and minced (mince the entire onion and store half to use later in the week)
  • pita bread pockets
  • cumin- 1 tbspn
  • salt- 1 tspn or to taste
  • For Greek Yogurt Cucumber Sauce
  • Oikos Organic Plain Greek Yogurt- 16 oz. (2 cups)
  • cucumber- 1, peeled and sliced
  • dried basil- 1 tbspn
  • lemon pepper- 1 tbspn
  • onion powder- 1 tspn

Instructions

  1. Brown beef in skillet with minced onion until cooked thoroughly, season with cumin and salt to taste
  2. Arrange beef mixture in pita pockets and top with Greek Yogurt-Cucumber sauce
  3. For Greek Yogurt Cucumber Sauce
  4. Chop cucumber into tiny pieces
  5. In small mixing bowl combine chopped cucumber, yogurt, basil, lemon pepper and onion powder; mix well
  6. Serve cucumber sauce over pitas

Reincarnating The Leftover

If your family is like my family, they don’t like to eat leftovers.  So what you’re left with at the end of the week is a lot of food to throw out.

Not only do I use my leftovers, I actually plan my weekly family dinner menu so that I intentionally have leftovers.  For example, when I saute chicken to make Chicken Madeira, I’ll cook more than I need and store the extra cooked chicken to use later on in the week for another recipe like Tomato Basil & Chicken Penne or Chicken Enchiladas.  I slice up leftover London Broil and store to make French Dip Sandwiches the next day.

Buffalo Chicken Wrap Recipe:

Ingredients:

  1. leftover cooked chicken tenders, diced
  2. buffalo hot sauce (like Frank’s Red Hot Sauce)
  3. iceberg lettuce
  4. blue cheese crumbles
  5. tortillas

Directions:

  1. tossed diced chicken tenders in buffalo sauce
  2. place chicken in center of tortilla and top with lettuce and cheese
  3. fold tortilla

 

Chicken Parmesan Recipe:

Ingredients:

Chicken Parmesan Recipe

Chicken Parmesan made from Leftover Homemade Chicken Tenders

  1. leftover chicken tenders
  2. marinara sauce
  3. parmesan cheese
  4. dried parsley

Directions:

  1. Place leftover chicken tenders in long baking dish
  2. cover with marinara sauce
  3. top with shredded parmesan cheese and sprinkle with dried parsley
  4. bake at 350 degrees until hot, approximately 25 minutes
  5. Serve with pasta
