    Lately I’ve been doing a bit of my own. Beef, potatoes, carrots, orange juice and brown sugar. sort of a sweet pot roast….yummy!!!

    From the organized cook, believe it or not, Roasted Brussels Sprouts. I would refuse Brussels Sprouts, but was given some from a friend. So I decided to try the recipe. Not that Brussels Sprouts are my new favorite veggie, but I may not flat out refuse them anymore :-)

    I really love to use my slow cooker when I’m working crazy hours or have lots of running around to do. This past Sunday we did a BBQ pork chops that were so simple yet tasted awesome … all with about 4 ingredients.

    Bet if I let it go an hour or so longer, we would have had an awesome BBQ shredded pork for sandwiches.

    I don’t have a favorite recipe for the slow cooker since I am still trying to get the hang of it. I do like cooking chicken breasts bone-in in the crockpot and then shredding it to use for recipes later. Works better than any other way.

    My favorite crockpot recipe is Mango Chipotle Roast. Spiced and seared chuck roast on top of peppers, onions, mango chunks, and pineapple chunks. Then topped with a can of Mango Nectar, a jar of Chipotle salsa, and a little worchestershire sauce. When it’s done you remove the roast and take half of the fruit/veggie/juice mixture and puree it in a blender to make a sauce for the roast and noodles.

    pot roast recipe:
    pot roast (5lb)
    onion soup mix
    2 cans of mushroom soup
    about 1.5 cups water

    mix together, cook 4 hours on high or 8 hours on low

    really simple (seriously, the simplest) and turns out great.

    i wouldn’t use too much pot roast though – probably better to halve the recipe. if you freeze the meat, it gets too chewy

    Cream Cheese Chicken is my favorite recipe.

    Envelope of Dry Italian Dressing Mix
    Chicken Breasts
    1/2 cup butter
    Cream of Soup (Chicken, Mushroom and Celery are all good)
    block of cream cheese

    With Slow cooker on high melt butter in bottom, add in italian dressing mix until well incorporated. Add in chicken breasts and stir to coat. Cook on high for 2 hours or until done. Pull chicken breasts out and put on plate. Put can of soup and block of cheese in slow cooker and stir until combined. Add chicken back in and stir to coat.

    Serve over rice or mashed potatoes!
