Cucumber Beet Radish Salad

Ingredients

  • 1 cucumber, peeled
  • 1 bundle of radishes, trimmed
  • 3 beets, trimmed and peeled
  • red leaf lettuce- 1 bundle, washed and chopped
    • For the salad dressing:
  • Steakhouse Vinaigrette Recipe

Instructions

  1. place chopped lettuce into salad bowl
  2. slice cucumber into 1/2-inch slices
  3. stack cucumber slices into piles of four at a time, then dice into matchsticks
  4. slice the radishes and beets into matchstick shapes similar to cucumbers
  5. top lettuce with cucumber, radishes and beets
  6. drizzle with Steakhouse Vinaigrette
  7. toss

Caprese Salad

Ingredients

  • Beefsteak Tomatoes- 2-3
  • Fresh Mozzarella- 1 lb
  • Fresh Basil
  • Olive Oil
  • Balsamic Vinegar

Instructions

  1. Find Your Cutest Serving Plate
  2. Slice Tomatoes into half-inch slices
  3. Slice Mozzarella also into half-inch round slices
  4. Assemble tomatoes and mozzarella on plate
  5. Place a basil leaf in between each slice of tomato and mozzarella
  6. Wait until just before serving to drizzle with olive oil and balsamic vinegar

Caprese Salad is one of my favorite summertime appetizers, and here’s why:

1.) I can put some of that basil from my garden to good use.

2.) I can assemble it ahead of time in just a few minutes and pull it out of the refrigerator just minutes before serving.

3.) There’s no marinating or cooking involved in this simple recipe.

How To Make Homemade Vinaigrette

This is my favorite homemade vinaigrette recipe- light and tangy with a little pow!  I first made this simple salad dressing over the summer while vacationing in Carlsbad, just experimenting with some ingredients while grilling steaks one night.

Ingredients

  • olive oil- 1/2 cup
  • white wine vinegar- 4 tbspns
  • lemon juice- 2 tbspns, or juice squeezed from 1/2 of a lemon
  • McCormick Montreal Steak Seasoning- 1 tablespoon

Instructions

  1. Whisk ingredients together
  2. Drizzle over salad
  3. Toss

Fall pears are here again.  Red, green and dark yellow pears make for some beautiful food photography.  They also make for a great Fall salad like this Fall Spinach Salad.

Harvested late September through April, Bosc pears are dark yellow.  Anjou pears come in both red and green.
