Fallsagna (Vegetable Lasagna)

Vegetable Lasagna Recipe

Fallsagna (Fall Vegetable Lasagna)

Fallsagna (Fall Vegetable Lasagna)

Ingredients

  • zucchini & yellow squash- 1, sliced into 1/8 inch slices
  • fresh baby spinach lettuce- 12 oz.
  • lasagna pasta- 1 lb (use corn tortillas for a gluten-free version)
  • olive oil- 3 tablespoons
  • butter- 1 tablespoon
  • minced garlic- 1 teaspoon
  • fresh or dried parsley- 1 teaspoon, or use Herb Ice Cubes
  • For Sauce, mix together:
  • ricotta cheese- 8 oz.
  • Parmesan cheese- 1 cup
  • 1 egg
  • - or -
  • Instead of using ricotta, parmesan egg mixture, use 1 jar alfredo sauce

Instructions

  1. Boil pasta in salted water until tender.
  2. Heat olive oil, butter and garlic and herbs in heated or non-stick skillet.
  3. Saute zucchini and squash in oil and butter until slightly soft, approximately 3 minutes.
  4. Add spinach and saute until reduced, approximately 3 more minutes.
  5. Drain pasta.
  6. Heat oven to 375 degrees F.
  7. Drop a spoonful of sauce in the bottom of the casserole pan, then place layer of pasta noodles on the bottom over the sauce.
  8. Add a layer of vegetables on top of the pasta.
  9. Add a layer of cheese sauce over the vegetables.
  10. Keep layering noodles, vegetable and sauce, then cover completely with a layer of noodles topped with some sauce and sprinkled with shredded Parmesan cheese
  11. Bake until brown and cooked thoroughly, approximately 40 minutes.

top with a layer of pasta, sauce and Parmesan cheese before baking

 

When I think of Fall Recipes, I think of casseroles, slow-cooker favorites and Fall vegetables like spinach, broccoli, brussels sprouts, zucchini and squash.   This week’s Weekly Meal Plan from The Organized Cook highlights many of my favorite Fall vegetables starting with Fall Vegetable Lasagna- or as I like to call it- “Fallsagna”.

Toni’s Tummy Tonic

How To Cure An Upset Tummy

My recipe for Tummy Tonic originated one morning when my friend, Noelle, showed up to my house with an upset tummy.  She was always getting nauseous and said the only thing that settled her stomach was some juice from our nearby raw foods cafe.  “Every time I go there it costs me $8.00 for one cup of juice.  Tou need to make this“, she said.

I took a few sips, and then got to work.  Noelle knows how I love to create my version of a food dish or drink from taste; it’s like playing a game of Sudoku.

I later shared my Tummy Tonic with my grandmother during her visit who also suffers from chronic nausea and she couldn’t believe the immediate relief.  When she got home she shared some with her friend who then used it on her- get this- dog.

One of my daughters gets an upset stomach often from nerves, the poor girl worries about everything.  Toni’s Tummy Tonic to the rescue.

So what’s the secret?

Toni’s Tummy Tonic Ingredients

  1. Cinnamon Sticks, 5-7
  2. Fresh Ginger, 1-2 whole peeled and sliced thin
  3. Whole Cloves, 2 tbspns
  4. Ground Ginger, 2 tbspns
  5. Organic Honey, 1 cup
  6. Non-Concentrated White Grape or Apple Juice, 1/2 Gallon

Toni’s Tummy Tonic Directions

The first thing you’ll need is a big stock or soup pot.

1.  Place sliced ginger, cinnamon sticks, cloves and ground ginger in a stock pot 3/4 full of water

2.  Bring to a boil over medium-high heat

The cinnamon sticks and cloves will float, but ginger sinks to the bottom

 

3.  Let it boil for a few minutes, then cover and reduce heat to simmer for about 10 minutes.

4.  Leave it covered, turn heat off and let it steep for an hour.

5.  Place strainer over another large pot and strain and discard ginger, cinnamon sticks and cloves by pouring through strainer into another pot

6.  Add honey to juice in pot and stir

7.  Combine juice with the fruit juice; you may not have enough room in one pot and will therefore need to pour half of your juice in one pot and half in the other to add the fruit juice to both pots

8.  Store in juice containers in the refrigerator

This recipe makes about 2-3 gallons so there’s plenty to share with your friends, family…. or friend’s dog.

It’s true.  My Sunrise Breakfast Bowl recipe requires only one muffin pan.  There are no spoons, bowls, spatulas or skillets to clean which makes this the perfect breakfast recipe for kids to make.

Kids are proud to make breakfast, but tiny hands are not well suited for frying, flipping or boiling.

My girls love to cook and could crack an egg before they were out of diapers, so they’re able to make this easy recipe almost completely on their own with just a little help getting the muffin tin in and out of the oven.

Ingredients:

  1. Whole grain bread- 12 slices with crust taken off
  2. Eggs- 1 dozen
  3. Bacon- 1 package precooked bacon
  4. Butter

 

Directions:

  1. Preheat oven to 375 degrees

 

2.  Grease a muffin tin with butter and place one slice of bread into each hole pressing down in the middle.

3.  Crack one egg directly onto each slice of bread.

Precooked Bacon

4.  Heat bacon in the microwave according to directions (about 1 minute) and place one cooked slice into each egg

Yes, I use the precooked bacon and am proud of it.  I love cooking with- and eating- bacon but hate bacon grease… what a lovely invention, this precooked stuff.  Let someone else clean the grease!

5.  Bake until egg is just cooked, or until desired consistency- yolk runny, about 10 minutes; slightly runny, about 13 minutes and cooked thoroughly, about 17 minutes
