A Breakfast at Tiffanys Birthday Party

My oldest daughter may be too old for the typical themed birthday party with cake and ice cream, but she’s never too old for me to make her day special.

It seems like just yesterday when I planned fun and elaborate birthday parties for Rayana, like her 13th birthday when I sent out invitations with just a tater tot glued to the front (sprayed with clear paint) for her Napoleon Dynamite swim party.  A dozen girls swam, snacked on “gosh-darn quesadillas” and tater tots, and delighted at the ice-cream sundae bar.  Then when the sun began to set, they sat on towels in the grass to watch an outdoor showing of the movie while being served buckets filled with popcorn, licorice and glow-in-the-dark bracelets.  Sigh, I miss those days.

Even though Rayana and her friends now “go out” for her birthday, I always hold a special gathering where everyone can stop by and share in a “casual” celebration with food, cake and punch before heading out for whatever college kids do nowadays.  This year I decided on a “Breakfast at Tiffanys” inspired party.

The Tiffany’s necklace is actually Rayana’s.  She received it as a gift from my husband the day the twins were born.  The inscription reads, “You Will Always Be the #1 Girl”, and it still brings a tear to my eye.  It’s been seven years ago since she got that necklace, and a while since she’s worn it.  So, for decoration, I retrieved it from her jewelry drawer and had it shined to put on display, and to remind her that she will always be number one.

There’s no need to go buying expensive party decor.  I used a mannequin from my closet and wrapped it with ribbon, then put a crown on top.  I used beautiful frames that I already had to insert custom-made signs that I printed myself.  And of course- it wouldn’t be a party without my favorite chandelier cupcake stand…. I love that thing (thank you, HomeGoods!)  Come to think of it, the mannequin, frames and cake stand are all from HomeGoods as well.

Our snack- a Mashed Potato Martini Bar where guests got a martini glass with a scoop of mashed potatoes, then selected their toppings of cheese, bacon, green onions, chicken and/or olives.  I have no doubt Holly Golightly would approve.

Chocolate-covered strawberries add elegance to any occasion, but gave my party table a beautiful contrast in color.

Peep! Skip The Frosting Cupcakes

Peep! Skip The Frosting Cupcakes.

Set your timer three minutes before baking is complete and place one Peep on each cupcake, then bake until melted- approximately three minutes.

This Easter, save time baking cupcakes by skipping the frosting and using Peeps to melt on your cupcakes.

I used a basic white cake mix and added food coloring:

add a few drops of food coloring; I like Duff's Neon Food Coloring

set timer for three minutes prior to baking being complete

Skip The Frosting Cupcakes- Smores Style

Smores Cupcake Recipe

For chocolate cupcakes you can use boxed chocolate cake mix like Pillsbury Chocolate or Dark Chocolate, or Betty Crocker Milk Chocolate or Dark Chocolate.

Or you can use my homemade chocolate cupcake recipe mix below….. if I do say so myself, this recipe is the bomb.

Toni’s Chocolate Cupcake Mix Recipe

Ingredients:

  1. flour- 1 1/4 cup
  2. cocoa powder- 1/2 cup, like Hershey’s Cocoa

  3. baking powder- 1 tspn
  4. sugar- 1 cup
  5. butter- 1 stick
  6. milk or dark chocolate- 4 oz., melted in microwave
  7. egg whites- 3
  8. milk- 1 cup
  9. vanilla- 1 tspn
  10. honey graham crackers- quartered, like Honey Maid Honey Grahams
  11. jumbo marshmallows- like Jet-Puffed Marshmallows

Directions:

  1. mix together flour, cocoa powder and baking powder
  2. In standing mixer, cream together butter and sugar
  3. add melted chocolate, egg whites, milk and vanilla; mix together until creamy
  4. slowly add flour mixture until batter forms
  5. bake until toothpick pulls out clean

    five minutes before baking is complete, place graham crackers......

  6. set timer about five minutes before baking is complete, at 15 minutes
  7. add one graham slice on top of each cupcake then top with a marshmallow
  8. continue baking another 5 minutes until marshmallow is toasted and toothpick comes out clean

Real Red Velvet Cupcakes- Skip The Frosting!

Creating new recipes can be challenging but fun.  I wanted to bake my Skip The Frosting Cupcakes this year for Valentine’s Day and have used several Red Velvet cake recipes in the past.

I don’t know about you, but I like my Red Velvet cake to taste less like white cake with red food coloring, and more like- well, Red Velvet.

So what does “Red Velvet” taste like?  With very little information out there, this is the question I asked myself.

And here is what… uh, myself answered.

Real Red Velvet Cupcakes- Skip The Frosting!

Real Red Velvet Cupcakes- Skip The Frosting!

Ingredients

  • cake or all-purpose flour- 2 1/2 cups
  • sugar- 1 1/2 cups
  • baking soda- 1 tspn
  • fine salt- 1 tspn
  • ground cinnamon- 1 tspn
  • cocoa powder- 1 tspn
  • canola or vegetable oil- 1 1/2 cups
  • milk- 1 cup
  • egg whites- 4
  • red food coloring- 2 tbspns
  • white distilled vinegar- 1 tspn
  • vanilla extract- 1 tspn
  • strawberry extract- 1 tspn
  • marshmallows, jumbo (use strawberry marshmallows for Valentine's day)

Instructions

  1. Preheat oven to 350 degrees F
  2. In a large mixing bowl, sift together flour, sugar, baking soda, salt, cinnamon, and cocoa powder
  3. In another mixing bowl or electric stand mixer, whisk together oil, milk, egg whites, food coloring, vinegar, vanilla and strawberry extracts
  4. Mix the dry ingredients into the wet ingredients using a stand mixer until batter is smooth
  5. Pour batter into lined cupcake tin
  6. Set timer five minutes before baking is complete, approximately 14-16 minutes to add marshmallows
  7. Finish baking for five minutes until toothpick comes out clean, total baking 19-21 minutes
