Summer Herb Potatoes


  • baby potatoes (like fingerling)- 2 lbs, sliced in half lengthwise
  • use items below, or Herb Ice Cubes
  • olive oil- 4 tablespoons
  • butter- 3 tablespoons
  • garlic- 2 cloves, minced
  • fresh garden herbs like basil, parsley and chives, chopped


  1. heat olive oil with butter and garlic in large saute pan over medium-high heat
  2. add potatoes and herbs
  3. saute until potatoes are tender, approximately 20 minutes
