Grand Marnier Glaze

Ingredients

  • Grand Marnier- 1 cup
  • Orange Juice- 1 cup
  • Sugar- 1 cup mixed with
  • Corn Starch- 2 tablespoons

Instructions

  1. Heat Grand Marnier and Orange Juice over medium heat until bubbly
  2. Add sugar mixed with Corn Starch and dissolve until glazed
  3. Pour over the top of cake

Peggy Sue Enchiladas

Simple Enchiladas Recipe

Peggy Sue Enchiladas

Peggy Sue Enchiladas

Ingredients:

  1. ground beef- 1- 1 1/2 lbs
  2. onion- 1 small, peeled and minced
  3. green enchilada sauce- 1 15oz. can
  4. red mild enchilada sauce- 1 15oz. can
  5. shredded monterey/cheddar cheese- 16oz.
  6. corn tortillas

Staples

  1. canola oil- ¼ cup
  2. toothpicks

Directions:

  1. Brown ground beef in skillet over medium-high heat
  2. Drain any excess oil
  3. Remove from heat and all minced onion, half can of red enchilada sauce, half can green enchilada sauce and about half bag (or 1 cup) shredded cheese; mix well
  4. Heat oven to 375⁰
  5. Heat vegetable oil in small skillet over medium heat
  6. Dip tortillas, one at a time, in oil until just soft, approximately 3 seconds each letting excess oil drip off back into skillet
  7. Transfer tortilla to long baking dish and add a spoonful of beef mixture in the center; fold and secure with toothpick
  8. Repeat steps 6 & 7 until the baking sheet is completely lined up with enchiladas and/or beef mixture is gone
  9. Mix the remaining red and green enchilada sauce together and pour over the top of enchiladas
  10. Top with remaining cheese (about a cup) and remove toothpicks
  11. Bake until crispy at the edges, approximately 25-30 minutes
