Each week you’ll find a fusion of American, Asian, Italian and Mexican foods as well as healthy portions of beef, chicken, fish and pasta. Here’s just a sampling of the easy-to-make recipes you can enjoy:

Week 1 (just $97 in groceries!)

Day 1:  Lemon Pepper Pork Chops with Rice Pilaf & Vegetable Sauté

Day 2:  Swedish Meatballs, Spinach Pasta with Tomatoes & Buttery Garlic Rolls

Day 3:  Pork Fried Rice with Thai Shrimp Pizza & Crisp Asian Cucumber Salad

Day 4:  Hot Meatball Sub Sandwiches & Green Onion Garlic Chips

Day 5:  Shrimp with Penne Pasta & Garlicky Garlic Bread

Week 2 (only $89 in groceries!)

Day 1:  Italian Sausage & Peppers with Mushroom Cheese Farfalle

Day 2:  Ratatouille Pan-Simmered Steak with Steamed Brown Rice

Day 3:  Balsamic Chicken & Walnut Gorgonzola Salad

Day 4:  French Dip Sandwiches & Creamy Tomato Soup

Day 5:  Tortellini Soup & Spinach Chicken Pizza

My menus are organized to reuse key ingredients throughout the week. For example: you may use half of a chopped onion on Day 1, and store the remaining onion to use in a casserole on Day 4. You may sauté more chicken breasts than you need to use for Chicken Madeira on Day 2, and store the remaining sautéed chicken breast to use in a Chicken Curry on Day 5. You’re not just maximizing ingredients – you’re actually reducing time. Think about it … you’ve already reduced the time it takes for those two preparation items by half. You’ve also reduced the number of knives, cutting boards and sauté pans to clean by half. Now apply that method throughout the entire week, and the savings just keeps adding up. By planning weekly family dinners, and giving you all of the tools to bring those healthy dinners to the table including your grocery shopping lists and easy-to-follow directions, The Organized Cook™ makes it easier for you to keep your family eating healthier so you eliminate the pressure and eliminate the guilt.

Going shopping…in our closet.

They say that we humans use only 10% of our brains at any given time. I think the same may be true for our clothes. As a busy mom, it’s easy for me to not only fall into ruts in routines, but ruts in what I wear; I like to call my most comfortable outfits my “mom uniform”. But I’m only using about 10% of my wardrobe. What am I saving the other 90% for? Don’t they also say that life is not a rehearsal? Why am I choosing such visually uninspiring clothes every day? I used to think the answer was to head to the mall and buy more clothes; but all I was doing was diluting that 10%. This is where the one dreaded task of cleaning out the clothes closet can accomplish so many things. When I clean out my closet, I look at it as an opportunity to “go shopping” at the same time…instead of spending money, I’m spending only time. When I shop in the stores I feel inspired; so when I shop in my closet I do things to inspire me as well like:

1.) Bring a fashion magazine into your closet to see if you can put together looks with pieces you already have. You might be surprised at how many clothes you don’t need to buy!

2.) If the item doesn’t inspire you, donate it.

Stay open and ready for special moments

I know it sounds a bit contradictory to be organized and prepared for spontaneous moments. But I believe that by staying organized, you open your life up to allow more spontaneous moments. In the desert we get some amazing sunsets. I keep a picnic blanket on our back patio, folded in a chest where we keep outdoor toys. So if I’m in the middle of washing dishes, homework or whatever mundane task is taking precedence at that moment, and I see the sky lighting up in gold, tangerine, neon red and sometimes lavender, we can quickly grab the blanket, and sit on the grass to watch the sky change colors. It doesn’t take much time out of my evening, the sun has set in a matter of minutes, but those memories will last a lifetime.
