Skip the Frosting Cupcake: A Two-Year Anniversary Celebration

Happy Anniversary, Sweety!

I can’t believe it’s been two years since I wondered what would happen if I stuck a large marshmallow on top of my cupcakes while baking instead of frosting them.  The result- my famous “Skip The Frosting” Cupcakes.

Pop Rocks Popcorn…. Popcorn with a “Pop”

A variation of this recipe can be used for just about any occasion. For the upcoming 4th of July celebration, I took my traditional chocolate popcorn recipe and added some “pop”… Pop Rocks candy, that is!

Ingredients

  • buttered popcorn
  • Wilton white candy melts or white chocolate
  • Pop Rocks in red and blue

Instructions

  1. place buttered popcorn in large bowl
  2. melt white candy or chocolate in double-boiler
  3. drizzle melted candy or chocolate over the popcorn
  4. use hands to loosely and carefully toss to melted chocolate throughout popcorn
  5. top with Pop Rocks

Man-Catchin Beignets

If the quickest way to a man’s heart really is through his stomach, then some Man-Catchin Beignets should be on the menu this Valentine’s Day.  And, if my man doesn’t love them, at least I know I will.  When I visit Disneyland, it’s a ritual for me to stop by the late-night snack stand in Orleans Square to get some hot beignets with bechamel sauce- oh, my mouth waters just thinking of them.

I do have a homemade beignet recipe that I’ve used and love.  But this year I ran into this handy mixture at Cost Plus World Market.

Cafe Du Monde beignet mix from Cost Plus World Market

Ingredients:

  1. Cafe du Monde Beignet Mixture
  2. Canola oil
  3. Powdered Sugar

And for the sauce?  Homemade bechamel sauce would be nice, n’est ce pas?  But what would be even nicer (for moi), is an easier version using Jello Vanilla Instant Pudding mixed with a dash of pink… hot pink food coloring that is.

Sauce:

  1. Jello Vanilla Instant Pudding Mix
  2. milk
  3. hot pink food coloring

Directions:

after mixing the dough, roll it out on a floured surface

use a cooke cutter to cut dough into squares

fry in hot oil 380 degrees

until golden brown on both sides

mix together pudding mix, milk and a few drops of food coloring

serve and let the man-catchin begin!

  • organic unsweetened cocoa powder- 1/2 cup
  • Pyure Organic Stevia Sweetener- 6 tablespoons
  • organic vanilla extract- 1 teaspoon

Instructions

  1. Mix together coconut oil and cocoa powder until smooth.
  2. Add Pyure Organic Stevia and vanilla then stir until smooth.
  3. Pour into individual molds or shallow tray.
  4. Transfer to refrigerator to hardened.
