Family Dinners for Less Than $100 a Week

When I began writing The Organized Cook, my goal was to save as much time as possible in the kitchen.  As a busy mom of four,

one child with special needs, I needed to prepare dinner as efficiently as possible while creating healthy, delicious balanced meals for my family.

By creating a balanced menu each week using my special algorithm that reuses my time, ingredients and leftovers, what I found was that I was spending very little on my grocery bill.

After finishing The Organized Cook, I found that each of my Weekly Meal Plan menus will feed a family of four or five dinner for a week for about $100 a week- and most often less than $100 a week.  That’s less than what it costs to eat out just one night!

The Bureau of Labor Statistics indicate that families who eat dinner at home save 50% in dinner costs than families who mostly eat out.  Combine that savings with other techniques like menu planning through The Organized Cook and families can slash their food budget even more.

The Organized Cook is a monthly subscription that provides a Weekly Meal Plan including menu, grocery shopping list, easy-to-follow instructions and lots of time and money-saving tips.

Go Retro! Peggy Sue Enchiladas

I have an aunt named Peggy Sue.  Really.

One time she made enchiladas for me and it was- ideally- the most American 1960’s way to make enchiladas that I could imagine.  She actually mixes together red and green enchilada sauce.  They were unique; and they were delicious.

I used her simple enchiladas recipe, titled “Peggy Sue Enchiladas” in one of my family-favorite Weekly Meal Plans- on the menu last week for subscribers to The Organized Cook.

If you’re not a subscriber to The Organized Cook, the good news is that this meal plan can be purchased individually now in our Store, with no subscription obligation.  This is a perfect opportunity to sample The Organized Cook and this simple dish straight from Peggy Sue’s kitchen at the same time.

Both Peggy Sue and her enchiladas inspired me to create a new Pinterest board just for them.  I love Pinterest and we love you Peggy Sue!

Tortellini Soup and Spinach Gorgonzola Chicken Pizza

Tortellini Soup and Spinach Gorgonzola Chicken Pizza may just be one of the simplest… yet tastiest recipes on the menu from The Organized Cook.

The meal is also a perfect example of a cooking technique from my upcoming book that I like to call “reincarnating the leftover“.

Let’s face it, as a busy mom of four, by the end of the week I start to run our of steam… and new ideas for dinner.

However, using my cooking technique, this dinner only takes about 10 minutes to prepare from my family-favorite Weekly Meal Plans.

By simply cooking and storing extra Italian sausage on Monday, along with extra chicken from Wednesday’s Balsamic Chicken and remaining Gorgonzola cheese, and leftover Tomato Soup (pizza sauce); this meal really is the ultimate “reincarnated” dinner!  But it tastes anything but- it’s always a favorite for friends and family.

By the time Friday rolls around, I simply assemble all of these prepared ingredients and have dinner ready in minutes.

Now, how’s that for a “10-minute meal”?
