Basic Rice Pilaf

Basic Rice Pilaf

Prep Time: 2 minutes

Cook Time: 15 minutes

Total Time: 17 minutes

Yield: 4 servings

Serving Size: 1/4 cup

Basic Rice Pilaf

Ingredients

  • whole grain rice- 1 cup
  • almond slivers- 2 oz.
  • olive oil- 3 tablespoons
  • lemon juice- 1 teaspoon
  • garlic salt- 2 teaspoons

Instructions

  1. Bring 1 cup rice and 2 cups water to boil in saucepan (or use rice steamer)
  2. Once boiling, cover and reduce heat to low to simmer until liquid is absorbed, approximately 10 minutes
  3. Add all remaining ingredients to cooked rice: almonds, olive oil, lemon juice and salt
  4. Toss

Lemon Pepper Pork Chops

Lemon Pepper Pork Chops

Yield: 4 servings

Lemon Pepper Pork Chops

Ingredients

  • Pork loin chops- 2-3 lbs (1 per person); if making extra pork chops to store for Weekly Meal Plan, use 3-4 lbs (or two extra pork chops)
  • For Marinade:
  • olive oil- 1/4 cup
  • lemon- 1, sliced in half
  • lemon pepper- 1 tablespoon
  • salt- 1 teaspoon

Instructions

  1. For best results marinate chops ahead of time, 2-3 hours to overnight
  2. For Marinade:
  3. Mix together olive oil, zest and juice from lemon
  4. Season each pork chops with lemon pepper and salt, then place in shallow baking dish or large zip lock baggie
  5. Pour marinade over pork chops to coat evenly
  6. Dinner Time:
  7. If cooking Basic Rice Pilaf, start the rice before cooking the pork chops.
  8. Pork chops can be grilled outdoors, or inside on indoor grill or broiled in oven until cooked thoroughly, approximately 7 minutes depending on thickness

Food Photography Kitchen Makeover with GE Smart Energy Lighting

I spend a lot of time in my kitchen creating, cooking, photographing and writing.  Earlier this year I wrote about the importance of lighting for food photography in Recipe For A Great Food Photo.

Much of  my food photos are shot in natural sunlight through filters.  However, timing is not always on my side, and there are many occasions when I need to photograph indoors and at night.

It’s difficult to get indoor and nighttime photos to come out with the same vibrant color that outdoor sunlight gives, and many times they come out so yellow that not even photo enhancing can help.

Using flash photography is never an option for me because it gives off a glare, the same way that incandescent light bulbs can do.

Time For A Makeover

I decided it’s time to give my workspace (also known as my kitchen) a lighting makeover.  It was time to bring outdoor quality lighting into my kitchen that allows me the versatility to work, photograph and videotape whenever I want.

 

Being energy efficient was also a major factor in my makeover decisions.  With some help from GE Energy Smart’s Bright From The Start CFL, I found that I can achieve better lighting with their hybrid halogen, and save on my power bill.  GE Energy Smart bulbs last 8 times longer and use 75% less energy than incandescent bulbs.

 

The “Before” Kitchen

Before the kitchen lighting makeover, my ability to work was limited by the time of day.  Dawn and dusk gave me natural filtered sunlight, with the remaining day receiving direct sun.  At night, my incandescent kitchen light bulbs gave off a yellow hue.

The “After” Kitchen

By changing my kitchen light bulbs to a soft bright light, I eliminated the “yellowish” tone from my indoor kitchen lighting.  And, by adding a light fixture like this hanging pot rack, I was able to direct the light to my kitchen counter top where I cook, photograph and write the most.

Selecting A Light Bulb

Other than being energy efficient, other important factors in choosing a light bulb for me are brightness or “lumens” and “color temperature”.  Each light bulb has a rating that describes the color temperature from “warm” to “cool”.

 

I decided on the GE Reveal Light Bulbs.

According to the GE Energy Smart CFL Savings Calculator, I will be saving$65.70 this year on my energy bill for just my kitchen area, and $360 savings over the life of the bulbs, by switching to GE Energy Smart light bulbs.  With that savings, I can purchase a new set of stainless steel pans to hang on my new pot rack!

Grilled Herb Flank Steak

I marinate my steak about two days in advance, so come Memorial Day the steak is ready to grill- saving me lots of time.

Grilled Herb Flank Steak

Ingredients

  • Flank Steak 3-4 lbs, cut into 2-inch strips against the grain
  • Dijon Mustard - 1 cup (no need to measure exactly- it's more than half of a 12oz. bottle)
  • Red Wine Vinegar- 1/3 cup
  • Soy Sauce- 1/4 cup
  • Dried Oregano & Basil- 1 tablespoon each

Instructions

  1. Marinate steak a day or two in advance
  2. Make Marinade:
  3. Combine mustard, vinegar, soy sauce and herbs; mix well
  4. Place sliced steak into large zip-top baggie or shallow container
  5. Cover with marinade and coat steak evenly
  6. Seal and place in refrigerator to marinate
  7. Time To Grill:
  8. Remove steak from marinade directly to hot grill
  9. Cook until brown on both sides and desired wellness

Red, White & Blue Potato Salad

Ingredients

  • Petite Red, White & Blue (purple, actually- but close enough) Potatoes (I found the perfect ones at Trader Joe’s)- 3 lbs cleaned and quartered
  • Blue Cheese Crumbles- 8 oz.
  • Sour Cream- 12 oz.
  • Salt- 1 tablespoon

Instructions

  1. Heat oven on Broil
  2. Place potato chunks onto baking sheet and season with salt
  3. Drizzle olive oil over potatoes and toss loosely to distribute oil
  4. Cook until potatoes are brown, approximately 35 minutes
  5. Transfer to mixing bowl
  6. Add blue cheese and sour cream to potatoes and toss
  7. Serve warm or chilled

Ingredients

  • Cavatappi Pasta- 1 lb
  • Zucchini & Squash- 1 each, diced into half-chunks
  • Red Grape Tomatoes- 1 pint, sliced in half lengthwise
  • Yellow Grape Tomatoes- 1 pint, sliced in half lengthwise
  • Olive oil- 1/2 cup
  • Salt- 1 teaspoon
  • Parmesan cheese- 8 oz., shredded or grated

Instructions

  1. Boil pasta in salted water until tender
  2. Drain pasta reserving 1/2 cup of cooking water, then rinse pasta under cool water
  3. Transfer cooled pasta to salad bowl
  4. Heat oven to Broil
  5. Place zucchini, squash and tomato slices onto baking sheet and season with salt
  6. Drizzle with olive oil and toss to cover vegetables
  7. Cook until vegetable are tender and tomatoes begin to release juice, approximately 12 minutes
  8. Add vegetables with juice to pasta along with pasta water, then toss
  9. Top with Parmesan cheese
