Asparagus Brie Soup

Asparagus Brie Soup

Ingredients

  • asparagus- 1 1/2 lbs, trimmed
  • butter- 3 tablespoons
  • flour- 2 tablespoons
  • chicken broth- 1 15oz. can or 2 cups
  • heavy cream- 1 cup
  • brie cheese- 7 oz.

Instructions

  1. saute asparagus in butter until tender, approximately 3 minutes
  2. add flour and saute until flour mixes with butter to make a roux
  3. add broth and cream; bring to a boil
  4. transfer asparagus with fluid to blender and blend until asparagus is completely mixed in with fluid to form soup, but do not over-blend
  5. return soup to pan and bring back to boil
  6. add brie cheese and mix until melted, approximately 2 minutes

Asparagus makes the perfect Spring dish, with many local farmers markets and grocery stores offering great deals on this healthy vegetable.

My mother, who has always disliked soup, absolutely loves my Asparagus Brie Soup.  I made it first for her years ago when she was recovering from surgery, and now it’s the only soup she’ll eat.

Slow Cooker Chicken Tortilla Soup

Slow Cooker Tortilla Chicken Soup

Ingredients

  • boneless skinless chicken breasts- 1½-2 lbs
  • onion- 1, peeled and minced (store half of minced onion for day 3- Greek Pita Pockets)
  • black beans- 1 15oz. can, drained
  • red mild enchilada sauce- 1 28oz. can
  • crushed tomatoes-1 15oz. can
  • chicken broth- 1 15oz. can
  • avocado- 1 , sliced

Instructions

  1. Place chicken breasts in slow cooker
  2. Add half of minced onion (store half for Day 3- Greek Pita Pockets), black beans, enchiladas sauce, tomatoes and chicken broth
  3. Cook on high 5-6 hours
  4. During last hour of cooking, chicken will shred upon stirring with spoon
  5. Serve soup garnished with avocado slices

Slow Cooker Chicken Tortilla Soup with Zesty Polenta Cakes

Slow Cooker Chicken Tortilla Soup is perfect with the following dishes:

Zesty Polenta Cakes

Ingredients

  • polenta, prepared- 1 chub (tube)
  • Staples
  • minced garlic- 1 tablespoon
  • olive oil
  • salt
  • dried oregano
  • paprika

Instructions

  1. Heat olive oil in medium non-stick skillet
  2. Season both sides of polenta with salt, a pinch of basil and paprika
  3. Cook polenta rounds (slices) in olive oil until brown, approximately 4 minutes each side

Summer Garden Herbs Are Here. Now What?

Storing Fresh Herbs

Herbs have been abundant this summer and I’ve enjoyed using them in my kitchen.  I’m producing more herbs than I can possibly use, so I’m looking at other ways to use them store for later use.

Sure I could make pesto and freeze it in baby food jars, and that’s a great option.  I could also give fresh herbs away to friends.

But here’s what I decided to do this year.

Just about every soup, saute or sauce begins with the combination of  butter, olive oil and garlic.  With some herbs adding fresh flavor to the mix, I would have a head start in the kitchen by making Herb Ice Cubes.

By mixing fresh chopped fresh herbs with melted butter, olive oil and garlic and freezing in ice cube trays, cooking over the Fall and Winter will still taste like Spring.

During a recent cooking demonstration in front of a live audience, I began my instructions for a saute and paused, “this is normally when I tell you to heat some olive oil, butter and garlic in a saute pan”.  Noelle, my producer, looked a little puzzled as I went on, “but let me show you my ice cubes full of these staples with some added basil, parsley and chives.”  The audience loved it.
