Roasted Heirloom Tomatoes with Avocado & Brown Rice Pasta

Shopping at Trader Joe’s over the weekend, I picked up a container of beautiful heirloom tomatoes. I admired the array of colors these tomatoes covered- red, yellow, purple and green- and wondered what I could make with them.

After grabbing some fresh avocados and a pound of brown rice pasta, I headed home to try out this simple recipe.

Roasted Heirloom Tomatoes with Avocado & Brown Rice Pasta

Ingredients

  • colorful heirloom cherry tomatoes- 1 pint, sliced in half lengthwise
  • avocados- 2 ripe, diced into chunks
  • brown rice pasta- 1 pound
  • garlic- 2 cloves, minced
  • olive oil- 1/2 cup
  • lemon juice- 1 tablespoon (or juice squeezed from 1/4 lemon)
  • salt

Instructions

  1. heat oven to Broil
  2. bring salted water to boil in large pasta pan
  3. place tomato slices on baking sheet
  4. drizzle tomatoes with olive oil and dust with salt
  5. roast tomatoes in oven until they begin to char, approximately 7 minutes
  6. once water is boiling, add pasta and cook until tender
  7. once pasta is tender, drain and rinse under cool water (I only rinse pasta when making a cold salad or if it's brown rice)
  8. heat olive oil in large heated saute pan
  9. add pasta, tomatoes (with drippings), garlic and avocado to saute until pasta is just warm, only about 2 minutes
  10. transfer to serving bowl

This is the same recipe we use for our Ghostly White Turkey Chili in our Spooktacular Weekly Meal Plan.

Spinach Turkey Chili

Ingredients

  • Ground turkey- 1½-2 lbs.
  • Great northern beans- 1 15oz. can, drained
  • White navy beans- 1 15oz. can, drained
  • Cannellini (white kidney) beans- 1 15oz. can, drained
  • Fresh baby spinach lettuce- 1 precut ready-to-eat bag 16 oz.
  • Condensed chicken stock (like Knorr Homestyle Stock)- 1 tub (or 3 chicken bullion cubes, or 2 cans of Chicken Broth)

Instructions

  1. In large soup pot or Dutch oven, brown turkey over medium-high heat until just cooked
  2. Add all three cans of beans, spinach and stock or bouillion along with 4-6 cups of water- just enough to cover (or canned chicken broth)
  3. Bring to boil and let spinach reduce
  4. Reduce heat to medium-low and let simmer for approximately 10 minutes

Turkey Pizza Burgers

Turkey Pizza Burgers

Ingredients

  • ground turkey- 1½ - 2 lbs
  • spaghetti sauce- 1 small jar of your favorite
  • shredded mozzarella cheese- 1 cup (8 oz.)
  • shredded Parmesan cheese- 1/2 cup
  • black olives, sliced- 1 small can, drained
  • STAPLES:
  • garlic salt- 1 tablespoon
  • olive oil

Instructions

  1. Season turkey with garlic salt.
  2. Heat olive oil in heated or non-stick skillet over medium-high heat.
  3. Hand form burger patties and place in skillet to cook, flipping once, until cooked thoroughly, approximately 7 minutes per side
  4. While in skillet, top burgers with a spoonful of sauce, a small handful of mozzarella cheese (about 2 tablespoons) and some olives.
  5. Cook thoroughly and until cheese is melted over medium heat, approximately 4 more minutes.
  6. Transfer to plate.

This recipe is made with leftover steak, preferably London Broil, sliced thin.

Philly Cheese Steak Subs

Ingredients

  • leftover cooked sliced steak (preferably London Broil
  • thin deli-sliced mozzarella cheese- 1/4 lb
  • onion, peeled and sliced into thin strips
  • green bell pepper- 1, sliced into strips
  • mushrooms, sliced- 8 oz.
  • hoagie rolls
  • STAPLES
  • vegetable oil- 3 tablespoons
  • Worcestershire sauce

Instructions

  1. Heat oil in heated or non-stick skillet over medium-high heat
  2. Add bell pepper slices, onion slices and mushrooms while seasoning with Worcestershire sauce to sauté until vegetables are tender, approximately 4 minutes
  3. Add steak slices and sauté for another minute
  4. Lay slices of mozzarella cheese over steak mixture to melt, approximately a minute, then use spatula to transfer to hoagie rolls
