Turkey Meatballs & Spaghetti

Turkey Meatballs & Spaghetti

Ingredients

  • Ground turkey- 1lb
  • Seasoned breadcrumbs- ½ cup
  • Eggs- 1
  • Seasoned salt
  • Cooking spray
  • Spaghetti - 1 package
  • Spaghetti sauce- 1 jar of your favorite

Instructions

  1. In large mixing bowl combine turkey, breadcrumbs, eggs and salt to taste; mix well
  2. Heat a few tablespoons oil in a large non-stick frying pan
  3. Hand-form small meatballs and place in pan to cook, turning gently with a spoon, until all sides are brown and cooked thoroughly, approximately 12 minutes
  4. Prepare spaghetti according to package directions
  5. Once pasta is cooked, drain pasta reserving some (about ¼ cup of cooking water in the pan; return to warm pan and water; toss
  6. Pour sauce over spaghetti and meatballs

Chicken Parmesan

Chicken Parmesan

Ingredients

  • Crunchy Ranch Chicken Tenders (click on link below for recipe)
  • Spaghetti sauce- 1 jar of your favorite
  • Shredded parmesan cheese- 1 cup
  • (half of 16oz. bag)

Instructions

  1. Heat oven to 350
  2. Line chicken fingers side by side in a casserole or baking dish
  3. Pour spaghetti sauce over the top
  4. Top with a sprinkling of parmesan cheese
  5. Bake until heated thoroughly, approximately 11 minutes

Spaghetti With Butter Sauce

Ingredients

  • Spaghetti pasta- 1 package
  • Heavy cream (use milk if you don’t have cream)- 1/2 cup
  • STAPLES
  • Butter- 2 tbspns
  • Flour- 1/2 tbspn

Instructions

  1. Boil spaghetti in salted water until tender
  2. Drain pasta and don’t return to the pan yet
  3. Return empty pan to stove over medium-high heat; add butter until melted
  4. Add flour and sauté for about a minute
  5. Add cream or milk; stir
  6. Add cooked spaghetti to butter mixture and toss in the mixture

Mini-me Turkey Burgers

Ingredients

  • Ground turkey- 2-3 lbs
  • Mini slider buns- 1-2 packages
  • STAPLES
  • Seasoned breadcrumbs- 1- 1½ cups
  • Eggs- 1-2
  • Seasoned salt
  • Cooking spray

Instructions

  1. In large mixing bowl combine turkey, breadcrumbs, eggs and salt to taste; mix well
  2. Heat either skillet, indoor grill or outdoor grill; use cooking spray before cooking burgers
  3. Hand-form turkey into small mini burgers to about 3 inches in diameter
  4. Cook, flipping once, until brown and cooked thoroughly, approximately 4 minutes each side

Cheesy Broccoli Rice

Ingredients

  • Long-grain rice- 2 cups
  • Cheddar cheese soup- 1 can
  • Frozen broccoli- 1 small bag

Instructions

  1. In large saucepan, bring 2 cups rice and 4 cups water to boil
  2. Cover and reduce heat to low until water is absorbed, approximately
  3. 20 minutes.
  4. Heat broccoli in a microwave safe bowl with a few tablespoons of water
  5. until warmed thoroughly, approximately 6 minutes
  6. Once rice is cooked, scoop out about half of rice into a container to store
  7. for another delicious rice recipe
  8. Add soup and broccoli to remaining rice, stir

Southwest Chicken Enchiladas

Southwest Chicken Enchiladas

Ingredients

  • Stored cooked chicken breasts
  • red & green bell pepper- 1 each, deseeded and diced
  • stored diced green onion
  • cilantro- 1 bundle, hand-ripped from stems
  • queso fresco cheese- 1 round
  • green enchilada sauce- 1 28oz. can
  • corn tortillas, small- 1 dozen (or flour)
  • Staples
  • Cinnamon- 1 tspn
  • Chili powder- 1 tspn
  • Paprika- 1 tspn
  • toothpicks

Instructions

  1. Preheat oven to 350 degrees
  2. Place chopped cooked chicken into large mixing bowl
  3. Add half of red and green diced bell pepper and diced green onion
  4. Add half of cilantro and half of cheese, hand crumbled
  5. Add cinnamon, chili powder and paprika
  6. Top with 1/3 can of enchilada sauce; mix well
  7. Assemble enchiladas in long baking dish by spooning mixture in center of each tortilla and folding each side securing with a toothpick
  8. Pour remaining enchilada sauce over the top, then top with remaining cheese (crumbled by hand) and remaining diced bell peppers
  9. Remove toothpicks and bake until cooked thoroughly, approximately 15-20 minutes

  • corn- 1 small 7oz. can, drained
  • diced tomatoes with green chiles- 1 14oz. can
  • Staples
  • canola oil- 3 tablespoons
  • cinnamon- 1 tspn
  • paprika- 1 tspn
  • garlic salt- 1 tspn

Instructions

  1. Heat oil in large non-stick skillet over medium-high heat
  2. Add cooked rice, cinnamon, paprika, garlic salt, drained beans, drained corn and tomatoes
  3. Sauté until rice is tender and begins to brown, approximately 5 minutes
