Pub-Style Fish & Chips

Ingredients

  • fresh or frozen cod or other white fish - 2 lbs, thawed
  • beer or fish batter - (I use McCormick Golden Dipt Beer Batter) 1 10-oz. package
  • potatoes - 2-3 large, peeled and sliced into ½ inch slices
  • malt vinegar
  • tartar sauce
  • lemons - 1-2
  • STAPLES:
  • canola or vegetable oil
  • salt
  • Pub Style Chip Sauce
  • • mayonnaise - ¼ cup
  • • dijon mustard - 3 tbspns (about 3 big squirts)
  • • ketchup - 3 tbspns (about 3 big squirts)
  • • worcestershire sauce - a few shakes

Instructions

    Chips:
  1. Heat oven to 400º
  2. Place potato slices in mixing bowl
  3. Season generously with salt
  4. Drizzle about ½ cup oil over the top and toss
  5. Transfer to baking sheet and bake until tender, approximately 35 minutes
  6. For a crispy top, change oven to broil during last 5 minutes
  7. Fish:
  8. Mix batter according to package directions
  9. Pat fish dry with a paper towel
  10. In large non-stick frying pan heat oil, about 1 inch deep, over medium-high heat (or use deep fryer)
  11. Dip each piece of fish, one at a time, in batter then place in hot oil
  12. Fry fish, turning once, until golden brown on each side, approximately 4 minutes each side
  13. Chips Sauce:
  14. Mix together all ingredients and serve with chips
  15. Garnish fish with malt vinegar and lemon wedges

Ingredients

  • boneless skinless chicken breasts- 1 lb, cubed
  • broccoli florets- 16 oz.
  • lemon- 1, sliced in half
  • green onion- 1 bundle, trimmed and diced
  • red bell pepper- 1, diced
  • sliced almonds- 2 oz.
  • mango- 1, peeled and diced
  • avocado- 1, peeled and diced (do not prep ahead of time; wait until just before serving)
  • STAPLES
  • olive oil- 3 tablespoons
  • minced garlic- 1 tablespoon
  • salt- a pinch
  • For Polenta Cakes
  • prepared polenta- 1 chub (tube) (*like San Gennarro found at Albertson’s, Melissa’s or Fresh and Easy brand), sliced into 1/2 inch rounds
  • olive oil- 3 tablespoons
  • minced garlic- 1 tablespoon
  • oregano- 1 teaspoon
  • paprika- 1 teaspoon
  • salt- a pinch

Instructions

  1. Heat olive oil in large skillet
  2. saute chicken until cooked thoroughly, then remove to plate
  3. saute broccoli and green onions until tender
  4. add bell pepper and saute until slightly tender
  5. add chicken back to vegetables in skillet and squeeze one lemon half into pan to saute for another minute
  6. in separate bowl mix together avocado, mango and juice from second lemon half
  7. serve chicken and vegetable saute with avocado mango garnish
  8. For Polenta Cakes
  9. heat olive oil in skillet
  10. saute polenta rounds while seasoning top side with oregano, paprika and salt
  11. once bottom side of polenta rounds are brown, flip and cook until both sides are crispy

A Day with Chef Kas

“Eat Your Life”

I first met Chef Kas at one of our Vegas Bloggers events and was instantly taken with his energy and philosophy… on cooking and life.  Adam Kaswinder- aka “Chef Kas” dishes up a healthy and simple philosophy in the kitchen that he calls “Eat Your Life”- where what you eat is a reflection of  who you are.  If this is the case, then his recipes can only be healthy, inspiring and fun.  We hit it off in the kitchen like he was a younger brother to me, so I just knew we had to work together on a project.

 

Young Rock Star Chef Meets Meal Planning Mom

Adam and I decided to film a recipe together and I quickly realized the difference in being the young rock star when we began planning our recipe together.  Being the “meal planning mom”, I wanted to organize and plan our recipe well in advance, while Chef Kas wanted to see what food felt inspiring to him that day.  Our conversation went something like this:

Me:  “I’m making out our grocery shopping list now; what are we making?”

Chef Kas:  “I’m feeling like something with mango and avocado… and perhaps some chicken”.

Me: “Okay, sounds good.  So, what are we making?”

Chef Kas:  “Awesomeness.”

Me:  “Sweet.” (sigh)

Even halfway during the filming of our show, I still didn’t know exactly what Adam and I were cooking.  Chef Kas creates.  He begins with ingredients he “feels” at the time, with the results always being something delicious, wholesome and uplifting.

I explained to Adam that busy moms don’t always have the time to cook a meal around what ingredients they are “feeling” at the time, and, with busy family schedules, need to plan in advance.  I’ve always said that in order to create recipes and meal plans for moms, you have to be a busy mom.  What I loved about Adam is his interest in listening and relating to the challenges we on-the-go moms face juggling hectic family schedules and demanding careers with our desire to provide healthy meals for our family.

What would it be like- I wondered- to marry the “awesomeness” of Chef Kas with the “organization” of meal planning for busy families?  Well wonder no more, we have our first Chef Kas Weekly Meal Plan that we’ve appropriately named “Eat Your Life”.

Cooking Up Some Awesomeness

What Chef Kas and I cooked up that day was a delicious saute of chicken, broccoli, bell peppers, green onions and almonds with a side of mango and avocado and polenta cakes.  “So what do we call it?”, I asked.  Chef Kas then decided to appropriately name it “awesomeness”, and I had to agree.

Homemade Mashed Potatoes Recipe

Mashed Potatoes are a frugal and versatile side dish.  This recipe will feed four people, so to cook for more or prepare extra mashed potatoes for freezing or using in other recipes, double or triple this recipe.  Read more about the Underestimated Mashed Potato.

Mashed Potatoes

Ingredients

  • potatoes- 2 lbs, peeled and diced
  • salt- 1 tablespoon
  • butter- 4 tablespoons
  • milk- 1/2 cup

Instructions

  1. place potatoes in large pot
  2. season with salt
  3. cover completely with water
  4. boil until potatoes are tender, approximately 15 minutes
  5. drain potatoes and transfer to mixing bowl
  6. add butter and milk
  7. mash with a potato masher
  8. for creamier potatoes, use an electric mixer
  9. add more milk or butter as desired
  10. season with more salt as desired
