Festive Potato Cakes

Ingredients

  • mashed potatoes- 4 cups (perfect recipe for Leftover Mashed Potatoes)
  • flour- 1 cup
  • eggs- 2
  • milk- 1 cup
  • red bell pepper- diced
  • green bell pepper- diced
  • vegetable oil- 1/ 4 cup
  • green onions- 3, trimmed and diced
  • sour cream

Instructions

  1. combine mashed potatoes, flour, eggs and milk and beat until lumps are gone
  2. mix in red and green bell pepper
  3. batter should be slightly thicker than pancake batter; if too runny add 3 tablespoons of flour, and if too thick add 3 tablespoons of milk
  4. heat vegetable oil in non-stick skillet
  5. spoon potato mixture onto skillet to form a cake
  6. cook until brown on bottom before flipping, approximately 5 minutes- note: it takes a lot longer for potato cakes to cook than pancakes, so be patient
  7. once brown on the bottom, flip over to cook until brown on both sides
  8. serve with sour cream and green onions to garnish

How To Make A Pinata At Home

Looking for a fun project to make at home for Cinco de Mayo?  The girls and I decided to make a pinata at home for the first time and had a blast.

How To Make A Pinata At Home

Here’s what you’ll need to make your own festive pinata at home:

  1. balloon
  2. newspaper
  3. 1 cup flour & 2 cups water mixed together for paste
  4. scissors
  5. kite string
  6. crepe paper to decorate
  7. glue
  8. candy

Here is a step-by-step tutorial:

 

Step 1:  Lay down some newspaper because it’s going to be messy!  Then tear some of the newspaper into strips.

Step 2:  Blow up a balloon

Step 3:  Dip newspaper strips into paste an layer onto balloon leaving 3-inches open around the tip of balloon.  You’ll want to have at least 3 or 4 layers, and there’s no need to allow each layer to dry individually- just pile it on!

Step 4:  Allow balloon to dry overnight.  You can use a medium-size bowl to prop your balloon up.

Step 5:  Once paper is dry, pop the balloon and pull it out.

Step 6:  It’s time to decorate!  Using crepe paper and glue, create any design on your pinata.

7.  Fill the bottom of the pinata with crumpled crepe paper to help with better distribution of candy

Baja Fish Tacos with Cabbage Salad & Cilantro-Lime Rice

Baja Fish Tacos with Cabbage Salad & Cilantro-Lime Rice

Ingredients

  • tilapia, fresh- 2-3lbs
  • long grain rice- 2 cups
  • limes -4, sliced in half
  • cilantro- 1 bundle, chopped
  • Oikos Organic Plain Greek Yogurt- 1 cup (half of 16oz. container)
  • chipotle hot sauce- 4 tbspns (*like Tabasco Chipotle Pepper Sauce)
  • cole slaw cabbage mix- 1 pre-cut ready-to-eat bag
  • corn tortillas, small- 10-15
  • STAPLES
  • flour- 1 cup
  • salt, paprika, chili powder, garlic powder- 1 tspn each, mixed together
  • bread crumbs- 1 cup
  • vegetable oil (enough to fill pan ¼ inch deep)
  • olive oil- 2 tbspns
  • salt- 1 tspn
  • crushed red pepper (optional)

Instructions

    Tacos
  1. In shallow long dish combine flour, salt, paprika, chili powder, garlic powder and bread crumbs; mix well with a whisk or fork
  2. Heat oil in large non-stick skillet (about ¼ inch deep) over medium-high heat
  3. Coat fish, one at a time, in the flour mixture before transferring to hot oil to cook until golden brown on both sides, approximately 4 minutes each side
  4. Transfer cooked fish to a paper towel-lined plate to cool
  5. Rice
  6. Bring 1 cup rice and 2 cups water to boil in large pot over high
  7. Once boiling, cover rice and reduce heat to low to simmer until all water is absorbed, approximately 15 minutes
  8. Once cooked, mix in olive oil, juice from 2 limes, half of chopped cilantro and salt
  9. Baja Sauce
  10. In small bowl mix together yogurt and chipotle seasoning sauce
  11. Salad
  12. In salad bowl combine cabbage mixture, remaining cilantro and juice from 2 limes and crushed red pepper (optional); toss
  13. Serve fish in corn tortillas topped with Cabbage Salad and Baja Sauce
