Caprese Salad

Ingredients

  • Beefsteak Tomatoes- 2-3
  • Fresh Mozzarella- 1 lb
  • Fresh Basil
  • Olive Oil
  • Balsamic Vinegar

Instructions

  1. Find Your Cutest Serving Plate
  2. Slice Tomatoes into half-inch slices
  3. Slice Mozzarella also into half-inch round slices
  4. Assemble tomatoes and mozzarella on plate
  5. Place a basil leaf in between each slice of tomato and mozzarella
  6. Wait until just before serving to drizzle with olive oil and balsamic vinegar

Caprese Salad is one of my favorite summertime appetizers, and here’s why:

1.) I can put some of that basil from my garden to good use.

2.) I can assemble it ahead of time in just a few minutes and pull it out of the refrigerator just minutes before serving.

3.) There’s no marinating or cooking involved in this simple recipe.

How To Make Homemade Guacamole

Homemade Guacamole Recipe

Nothing will make me overindulge more than fresh homemade guacamole.

Here is my simple recipe and photo tutorial, below, on how to make this festive appetizer, just in time for Cinco de Mayo.

Ingredients:

  1. Avocados, ripe- 3-4
  2. Cilantro, fresh chopped
  3. Orange- 1
  4. Lime- 1
  5. Prepared Pico de Gallo (yes, I cheat a use an already prepared combination of tomatoes, onions and peppers)
  6. Salt- a pinch or two

Directions:

  1. scoop avocado from skin and mash
  2. add cilantro
  3. squeeze in juice from orange and lime
  4. add pico de gallo
  5. season with salt to taste

My secret ingredient: about half the juice squeezed from an orange plus the juice squeezed from a lime

Mashed together with pico de gallo and chopped cilantro

Some say that keeping the pit and returning to the guacamole will keep the guacamole from turning brown; I can’t say for sure that I agree, but it did make for a pretty photo.

But!  I have found that adding a half cup of sour cream seems to do the trick and keep it fresh looking.
