Rubbermaid Giveaway
I wrote in my New Year’s Resolution post “What Made Your List?” about how many goals for 2012 can relate back to family dinner time, whether it’s saving money, eating healthy or finding ways to free up your time for working out or learning a new language.
This week Rubbermaid is helping keep New Years Resolutions on track with a giveaway of the new Glass Easy Find Lids 8-Piece Set.

Reincarnating The Leftover
If your family is like my family, they don’t like to eat leftovers. So what you’re left with at the end of the week is a lot of food to throw out.
Not only do I use my leftovers, I actually plan my weekly family dinner menu so that I intentionally have leftovers. For example, when I saute chicken to make Chicken Madeira, I’ll cook more than I need and store the extra cooked chicken to use later on in the week for another recipe like Tomato Basil & Chicken Penne or Chicken Enchiladas. I slice up leftover London Broil and store to make French Dip Sandwiches the next day.
By reincarnating my leftover food, dinner takes just a few minutes some nights. Cooked food should be stored in an airtight container in the refrigerator. The Rubbermaid Glass Easy Find Lids 8-Piece Set are perfect for storing my food and keeping it fresh. Homemade Chicken Tenders
Leftover Homemade Chicken Tenders can be stored and used later in the week for a delicious, easy dinner like Buffalo Chicken Wraps or Chicken Parmesan.
Homemade Chicken Tenders
Buffalo Chicken Wraps
Buffalo Chicken Wrap Recipe:
Ingredients:
- leftover cooked chicken tenders, diced
- buffalo hot sauce (like Frank’s Red Hot Sauce)
- iceberg lettuce
- blue cheese crumbles
- tortillas
Directions:
- tossed diced chicken tenders in buffalo sauce
- place chicken in center of tortilla and top with lettuce and cheese
- fold tortilla
Chicken Parmesan Recipe:
Ingredients:
Chicken Parmesan made from Leftover Homemade Chicken Tenders
- leftover chicken tenders
- marinara sauce
- parmesan cheese
- dried parsley
Directions:
- Place leftover chicken tenders in long baking dish
- cover with marinara sauce
- top with shredded parmesan cheese and sprinkle with dried parsley
- bake at 350 degrees until hot, approximately 25 minutes
- Serve with pasta

I have a few goals – lose weight, read 30 books and build my food storage.
Since I do not make resolutions, my goals for the year are to spend more time in God’s word, go the extra mile for my family, love more, eat less, spend time with those who really hold my heart. But one goal I will complete (if God allows me the time on earth) in May is graduating with my BA in Secondary Education/English Lit. I’m so excited. ;)

My FAV Rubbermaid product is much like the leftover storage containers here, but mine are plastic bowls with the rubber-edged lids but clear tops. These have been my favorite since I rec’d them as a gift and can’t seem to find them in the stores!

My new years resolution is to be more grateful for every day, we lost everything in a house fire last July and it really turned our lives upside down. This year I am starting anew in so many ways but I am determined to be grateful.
These are actually my favorite Rubbermaid product because they are made from glass and they make the lids easy to find! But I do love their huge tupperware containers too, they make it so easy to store things without worrying about cardboard boxes breaking!
