Healthy Family Dinner Recipes
With a high protein value and creamy-rich taste, Greek yogurt is the perfect snack food to have handy when hunger strikes. And did you know that you can easily substitute Greek yogurt into many recipes for a healthy alternative to mayonnaise or sour cream?
Here are three of my favorite recipes using Greek Yogurt:
Greek Pita Pockets with Cucumber-Yogurt Sauce
Ingredients:
- ground low-fat beef, 1-1 1/2 lbs
- whole-grain pita bread pockets
- Plain Greek Yogurt- 16 oz.
- cucumber- 1, peeled
- garlic salt with parsley- 1 tbspn.
- cumin- 1 tspn.
- dried basil- 1 tspn
- lemon pepper- 1 tspn
- onion powder- 1 tspn
Directions:
- Brown beef in a skillet over medium-high heat until cooked thoroughly; season with garlic salt and cumin. Drain any excess fat.
- Chop cucumber
- In a mixing bowl, combine yogurt, chopped cucumber, basil, lemon pepper and onion powder; mix well
- Serve beef in pita pocket bread and top with Cucumber-Yogurt Sauc

Baja Fish Tacos
Baja Fish Tacos with Baja Sauce and Cabbage Salad Recipe
Ingredients:
- white fish, like Tilapia, 2-3 lbs
- flour- 1 cup
- chili powder (like Chipotle), paprika and salt- 1 tspn each, or 1 packet of taco seasoning
- canola oil
- Plain Greek Yogurt- 16 oz.
- chipotle sauce- 1/4 cup
- limes- 4, sliced in half
- cole slaw cabbage mix- 1 pre-cut ready-to-eat bag
- cilantro- 1 bundle, chopped
- crushed red pepper (optional)
- corn tortillas, smals
Directions:
Fish
- Pat fish dry
- combine flour and seasoning in shallow dish
- heat oil in large non-stick skillet over medium-high heat
- coat fish, one at a time, in flour mixture before frying in skillet until golden brown on both sides, approximately 4 minutes each side
Baja Sauce
- For sauce, combine yogurt, chipotle sauce and juice from one lime; mix well
Cabbage Salad
- Combine cabbage, cilantro and crushed red pepper in salad bowl
- Squeeze juice from remaining limes over cabbage; toss
Serve fish in corn tortillas topped with Cabbage Salad and Baja Sauce
Swedish Meatballs
Swedish Meatballs with Spinach Pasta and Yogurt Swedish Sauce
Ingredients:
Meatballs
- ground beef, 1-2 lbs
- onion, white- 1, peeled and minced
- seasoned bread crumbs- 1 cup
- eggs- 2
- salt- 1 tspn
- nutmeg- 1 tspn
- olive or canola oil
Pasta
- spinach pasta- 1 lb
Swedish Sauce
- Plain Greek Yogurt- 16 oz.
- cream of mushroom soup- 1 can
- milk- 1/2 cup
- paprika- 1 tbspn
- grape tomatoes- 1 pint, sliced in halves
Directions:
- In large mixing bowl combine beef, onion, breadcrumbs, eggs, salt and nutmeg; mix well
- Heat oil in large non-stick skillet over medium-high heat
- Hand roll beef mixture into 1 1/2-inch balls and place in skillet to cook, turning each one gently with a spoon until all brown all over and cooked thoroughly, approximately 15-20 minutes
- Boil pasta in salted water until tender
- Drain pasta reserving some (about 1/4 cup) of cooking water in the pan; return pasta to warm pan and water, and toss
- For sauce, warm soup and milk in saucepan over medium-high heat until hot
- Add yogurt and paprika; mix well
