Homemade Mac & Cheese

Homemade Mac & Cheese

Ingredients

  • elbow macaroni- 1 lb
  • shredded cheddar cheese- 16 oz. or 2 cups
  • cream of cheddar soup- 1 can
  • STAPLES
  • butter- 2 tbspns
  • flour- 1 tbspn
  • milk- ½ cup

Instructions

  1. Boil pasta in salted water in large pasta pot until tender
  2. Drain pasta in strainer and leave in the strainer
  3. Return pan to the stove to melt butter over medium-high heat
  4. Add flour and mix into the butter
  5. Add milk and mix well making a roux
  6. Add cheese and soup stirring until cheese is melted, approximately one minute
  7. Mix cooked macaroni into cheese mixture

Homemade Mac & Cheese Recipe

Cheesy Corn Bake Souffle is the perfect casserole for Easter Sunday brunch or dinner side dish.

Ingredients

  • cream style corn- 2 cans
  • seasoned breadcrumbs or corn meal- 2 cups
  • shredded cheddar cheese- 4 cups
  • green onions, 1 bundle, trimmed and diced
  • milk- 2 cups

Instructions

  1. preheat oven to 375 degrees
  2. mix together all ingredients in large mixing bowl
  3. transfer to greased baking casserole dish
  4. bake until cooked thoroughly, approximately 1 hour

Thanksgiving Recipes

This easy Thanksgiving recipe is part of my Toni’s 12 Days of Thanksgiving, and is so simple makes up for the fact that it cannot be prepared ahead of time.

Sauteed Spinach with Cranberries and Pine Nuts

Ingredients:

  1. fresh baby spinach lettuce- 2 16oz. pre-cut ready-to-eat bags
  2. dried cranberries like Ocean Spray Craisins- 1 5oz. bag or 1 cup
  3. pine nuts- 1 2-4oz. bag
  4. olive oil
  5. salt & pepper

Directions:

  1. Heat a few tablespoons olive oil in large skillet over medium-high heat
  2. Add spinach, cranberries and pine nuts and saute until spinach is completely reduced, approximately 4 minutes
  3. season with salt & pepper to taste
  4. Make this recipe right before serving.

Cassidy’s Favorite: Baked Macaroni & Cheese

Ingredients

  • Penne Pasta- 1 lb
  • Shredded Cheddar or Cheddar/Monterey blend- 2 cups
  • Cheddar Cheese Soup- 1 can
  • Butter- 2 tbspns
  • Milk- 1/2 cup

Instructions

  1. Boil pasta in salted water until al dente (do not overcook); drain
  2. Heat oven to 350 degrees
  3. Add butter, soup and milk; mix
  4. Add 1 cup cheese; mix
  5. Transfer to baking dish and sprinkle remaining cheese on top
  6. Bake 10-15 minutes

Whether it’s a Sunday afternoon lunch or a weekday side dish, this homemade macaroni & cheese is a family favorite.  What’s best about this dish, is there’s always leftovers to package in individual containers for later on in the week; and unlike the boxed stuff, this homemade version stores and reheats well.  Come Thursday, I’ll love myself for having something quick and easy to pop in the microwave for my picky eater or a quick side for PB&J after gymnastics on Saturday.

  5. Milk- 1/2 cup

Many recipes for homemade macaroni & cheese call for flour; but, quite frankly, I don’t like the floury taste.

Directions:

  1. Boil pasta in salted water until al dente (do not overcook); drain
  2. Heat oven to 350 degrees
  3. Add butter, soup and milk; mix
  4. Add 1 cup cheese; mix
  5. Transfer to baking dish and sprinkle remaining cheese on top
  6. Bake 10-15 minutes
