Roasted Heirloom Tomatoes with Avocado & Brown Rice Pasta

Shopping at Trader Joe’s over the weekend, I picked up a container of beautiful heirloom tomatoes. I admired the array of colors these tomatoes covered- red, yellow, purple and green- and wondered what I could make with them.

After grabbing some fresh avocados and a pound of brown rice pasta, I headed home to try out this simple recipe.

Roasted Heirloom Tomatoes with Avocado & Brown Rice Pasta

Ingredients

  • colorful heirloom cherry tomatoes- 1 pint, sliced in half lengthwise
  • avocados- 2 ripe, diced into chunks
  • brown rice pasta- 1 pound
  • garlic- 2 cloves, minced
  • olive oil- 1/2 cup
  • lemon juice- 1 tablespoon (or juice squeezed from 1/4 lemon)
  • salt

Instructions

  1. heat oven to Broil
  2. bring salted water to boil in large pasta pan
  3. place tomato slices on baking sheet
  4. drizzle tomatoes with olive oil and dust with salt
  5. roast tomatoes in oven until they begin to char, approximately 7 minutes
  6. once water is boiling, add pasta and cook until tender
  7. once pasta is tender, drain and rinse under cool water (I only rinse pasta when making a cold salad or if it's brown rice)
  8. heat olive oil in large heated saute pan
  9. add pasta, tomatoes (with drippings), garlic and avocado to saute until pasta is just warm, only about 2 minutes
  10. transfer to serving bowl

Probably one of the most versatile, frugal and efficacious dishes is the mashed potato.  Gracing our Thanksgiving dinner table each year, mashed potatoes are wildly overlooked for the remaining 364 days of the year.

At just pennies per serving, Homemade Mashed Potatoes are not only inexpensive, they’re one of the most versatile side dishes.  By adding a few cloves of fresh garlic during boiling and then mashing with the potato, the gourmet Garlic Mashed Potatoes are created.  By substituting milk with buttermilk, you have Buttermilk Mashed Potatoes.  And, Herb Mashed Potatoes can be made by adding some fresh or dried herbs like rosemary, thyme and parsley.

A Stitch In Time

Homemade mashed potatoes freeze and reheat well, so I like making extra and storing for a busy day’s side dish.  I recommend using glass storage containers like Rubbermaid’s Glass Food Storage or Ziploc’s Versaglass that go from the freezer and into the oven or microwave to reheat.

Roasted Brussels Sprouts

Another Fall Favorite Vegetable

Brussels Sprouts are one my favorite Fall Vegetables, and not just because they create beautiful food photography.  Brussels Sprouts are so easy to prepare with no peeling or dicing required.

I simply slice each one in half, drizzle with a little olive oil and season with salt & pepper.  After roasting for about 10-15 minutes until crispy brown, they make a perfect side dish.

But to be honest, I eat them as a snack…. they’re so crunchy and delicious.

Ingredients

  • fresh Brussels Sprouts- 1 lb
  • olive oil- 3 tablespoons (about)
  • salt & pepper- to taste (or, use McCormick's Montreal Steak Seasoning for an extra "kick")

Instructions

  1. Heat oven to 400 degrees F
  2. slice sprouts in half and place in mixing bowl
  3. drizzle with olive oil
  4. season with salt & pepper (or Montreal Steak Seasoning)
  5. toss
  6. transfer to baking sheet
  7. cook until crunchy brown, approximately 30 minutes

Orzo Broccoli Mushroom Feta Salad

Ingredients

  • Orzo Pasta- 1 cup (8 oz.)
  • baby spinach lettuce- 16 oz.
  • white mushrooms, sliced- 8 oz.
  • Feta cheese crumbles- 4 oz.
  • Lemon- 1/2 (or 1 teaspoon lemon juice)
  • STAPLES:
  • salt- 1 teaspoon
  • olive oil- 3 tablespoons

Instructions

  1. Boil pasta in salted water until tender, then drain
  2. Heat oil in large heated saute pan
  3. Add spinach and mushrooms to saute until tender
  4. Transfer pasta to large mixing or salad bowl
  5. Once spinach is reduced (but not overcooked), add to pasta in bowl
  6. Add cheese
  7. Squeeze lemon over the top
  8. Toss
