Pumpkin Pie Martini

Favorite Thanksgiving Recipes

We’ve been enjoying these martinis in my home to celebrate the end of another wonderful Thanksgiving Dinner for many years now.

(makes 4)

Ingredients

  • Vanilla Vodka- 1 cup
  • Creme de Cacao- 1 cup
  • Heavy Cream- 1 cup
  • Pumpkin Pie Spice by McCormick- 1 tablespoon
  • Whipped Cream (to rim martini glasses)

Instructions

  1. rim glasses by dipping them in a small plate filled with whipped cream
  2. mix together remaining ingredients in martini shaker with ice
  3. shake, pour and enjoy

What’s nice about my Thanksgiving cranberry punch recipe is that it can be made well in advance and stored for Thanksgiving Day as part of my Toni’s 12 Days of Thanksgiving.

Sparkling-Spiced Cranberry Punch Recipe

Sparkling-Spiced Cranberry Punch with Cranberry Ice Ring

Sparkling-Spiced Cranberry Punch with Cranberry Ice Ring

Ingredients

  • cinnamon sticks, whole- 2
  • whole cloves, 1 tbspn
  • ground ginger, 1 tbspn
  • cranberry juice- 1 quart, chilled
  • lemon-lime soda- 1 liter, chilled

Instructions

  1. Bring one quart of water to boil with cinnamon sticks, cloves and ginger (you can also put cloves in a tea steeper, or directly in water).
  2. Once boiling, reduce heat and let steep for an hour.
  3. Strain cinnamon sticks and cloves from the tea.
  4. Transfer tea to a container to chill in the refrigerator.
  5. Before serving, combine tea with juice and soda.
  6. Wait until just before guests arrive to place Cranberry Ice Ring.

Cranberry Ice Ring Recipe

You will want to make and freeze your Cranberry Ice Ring for your Sparkling-Spiced Cranberry Punch ahead of time and today is the perfect day to do it.

To make the ring, I use a plastic chip-and-dip server because it has the hole in the middle, like a bundt-cake pan.

Ingredients

  • frozen cranberry juice cocktail- 1 canister, thawed (you can also use bottled cranberry juice)
  • cranberries, fresh- 16 oz.
  • water- 2 cups

Instructions

  1. Pour thawed juice into mold.
  2. Add water to about two inches below rim.
  3. Mix well.
  4. Add cranberries to float on top.
  5. Freeze.
  6. Wait until just before guests arrive to place in punch bowl.

Homemade Summer Sangria

My recipe for Summer Sangria was a huge hit at my recent Mom’s Night Out party, and is so simple to make.

If you’re entertaining guests or attending a barbeque or party, homemade sangria is obviously more affordable than purchasing bottles of wine.  Plus it’s visually more appealing and a lot of fun.

My Summer Sangria is different than my Holiday Spice Sangria in that instead of using Fall spices like cinnamon sticks and cloves with pears, cranberries and brandy, I use summer ingredients like lemons, limes and mint (fresh from the garden, of course) with a Bacardi Rum flavor like limon, orange or peach red.

Homemade Summer Sangria

Ingredients

  • Lemons- 3, sliced
  • Limes- 3, sliced
  • Mint leaves- 1 cup
  • A simple red table wine (I use a jug of Carlo Rossi)
  • A fun Bacardi rum flavor like Limon, Orange or Peach Red
  • Fruit juice- your choice, like cranberry or apple- 2 cups

Instructions

  1. It's best to make Sangria 2-3 days in advance and store someplace cook like a refrigerator or sitting in a tub of ice.
  2. Combine all ingredients.
  3. Let it "chill" for a couple of days.
  4. After “chillin” for a few days, do a taste-test. If it’s too strong add more fruit juice. That’s the great thing about sangria, you simply keep adding to it until it’s perfect. Oh, and if anyone tells you to put sugar in your homemade sangria- don’t do it! Sugar is a great way to ruin a perfectly great sangria.

Because I live in the hot desert and my sangria jug is too large to put in my refrigerator, I simply put it in a cooler full of ice to “chill” for a few days.

After “chillin” for a few days, do a taste-test.  If it’s too strong add more fruit juice.  That’s the great thing about sangria, you simply keep adding to it until it’s perfect.  Oh, and if anyone tells you to put sugar in your homemade sangria- don’t do it!  Sugar is a perfectly great way to ruin a perfectly great sangria.
